We all knew this one was coming eventually – the infamous avocado on toast. Possibly my favourite breakfast in the whole world… actually it’s definitely my favourite. I order smashed avo every time I go for brunch, it’s a classic. This avo toast with spiced chickpeas is about to become your favourite. Gone are the days of having to go to a cafe for deluxe avo toast… you can make it yourself now! (and for probably a third of the price!)
Of course there are so many delicious ways to enjoy avo toast, and I’ll no doubt post more, but this is one of the best. It’s super filling and good for you too! The creamy, zesty avocado goes so well with the crispy, spicy chickpeas.
This recipe requires a tad more love than your usual smashed avo, but trust me it’s worth it. Also if you cook up a whole can of chickpeas, the leftovers make a great yummy snack! The chickpeas only take 12 minutes in the air fryer and in that time you can mix up the avo (which is basically just guacamole!)
The smashed avocado:
- avocado
- red onion
- lime juice
- salt and pepper
- garlic powder
The spiced chickpeas:
- chickpeas
- olive oil
- paprika
- cumin
- garlic powder
- onion powder
- chipotle chili powder (optional)
So there are a few tricks to getting perfectly crispy chickpeas… first, try and get them as dry as possible. I like to spread them out on a paper towel and then place a second piece on top and roll them between the two sheets. This will not only get the water off but easily remove the shells. I definitely recommend removing the shells, this really helps them to get super crispy. Then coat them in olive oil and spices and place in the air fryer at 160 degrees for 12 minutes, giving them a shake halfway.

SMASHED AVO TOAST WITH SPICED CHICKPEAS

Ingredients
2 slices sourdough
1 avocado
splash of olive oil
1/2 can chickpeas
1 lime
1/4 red onion finely diced
2 tsp garlic powder
1 tsp onion powder
1 tsp paprika
1 tsp cumin
1 tsp chipotle chili powder (optional)

Directions
- Drain the chickpeas and coat them in olive oil, half the garlic powder, onion powder, paprika, cumin, salt, and pepper. Pop them in the air fryer for 12 minutes, giving them a shake halfway.
- While the chickpeas are cooking, pop the bread in the toaster and mash the avo in a bowl with the rest of the garlic powder, red onion, juice of half the lime, salt and pepper.
- Top the toast with the smashed avo, chickpeas, lime zest and juice, and coriander.
