ROAST PUMPKIN AND CARAMELISED ONION PIZZA WITH FETA AND ROCKET

It’s the first day of Autumn and what better way to kick off the season of pumpkin-everything with a roast pumpkin and caramelised onion pizza?! There’s something so comforting and rewarding about homemade pizza… and it’s so much better for you than take away. This pizza is a little bit more fancy than your typical Domino’s… it does require the extra step of roasting the pumpkin but let me tell you it’s totally worth it. I love how the sweetness of the pumpkin and the onion is cut through with the salty feta – so good. Did I mention it has three kinds of cheese? I went with a blend of mozzarella and cheddar that I found in Woolies for the base. You can’t have a pizza without that classic cheese pull you get from mozzarella! The cheddar brings the classic cheesiness we all love, and like I said the feta is like little pops of saltiness to balance everything out. Yum!

Ah homemade dough… the bane of my existence. I never seem to be able to get it how I want it, does that happen to you guys too? I’ve always been a ‘thin and crispy’ gal, but my pizzas seem to come out more ‘classic crust’. If you prefer to just skip all the fuss and go with a store-bought dough I don’t blame you.

When I make it myself I just follow a pretty standard recipe. It involves flour, water, instant yeast, olive oil and salt. I do enjoy making pizza dough because you don’t have to knead it as much as pasta and it’s a lot softer and fun to play with!

A healthy(ish) vegetarian pizza option for the whole family.

Ingredients

  • Dough
  • 4 cups plain flour

  • 1 tsp salt

  • 2 tsps instant yeast

  • 1/4 cup olive oil

  • 1 1/2 cups warm water

  • Toppings
  • 1 tbsp olive oil

  • 2 tsps minced garlic

  • 1 cup mozzarella and cheddar blend

  • 1/2 a pumpkin cubed

  • 1/2 red onion

  • 1 tsp oregano

  • 1/4 cup feta

  • handful of rocket

Directions

  • The Dough
  • Combine in a bowl the flour, salt and yeast. Make a well and pour in the oil and water. Mix with your hands until a dough forms. Let it sit in an oily bowl for about 30 minutes to let it rise.
  • The Pizza
  • Lay the pumpkin and onion out on a baking sheet and drizzle with olive oil and salt and pepper. Roast in the oven at 180 degrees for 15-20 minutes.
  • Flatten the dough to your preferred thickness and drizzle on the olive oil and spread on a thin layer of garlic. Then add the mozzarella and cheddar blend, pumpkin, onion, oregano and feta. Place in the oven at 200 degrees for 10-15 minutes.
  • When the cheese is melted take it out and top with the fresh rocket.
