Yum yum in my tum. You are going to love these citrus salmon tacos… they’re fresh, zesty and packed full of flavour. Can you tell I’m excited for spring? There weather here is finally starting to warm up and I am living for it. These tacos are the perfect light and refreshing lunch, filled with perfectly cooked and slightly spicy salmon, crunchy corn, sweet pineapple and topped with salty crumbled feta.
It’s a super simple process. Just bake the salmon, toss together the salsa, heat up the tortillas and you’re done!
The salmon:
Okay, I’ll confess. I could eat salmon every day. You can flavour it so many different ways and have it with so many different things. The other day I had a creamy salmon pasta and I’m obsessed (recipe coming soon!). For this one, start by marinating it in a bowl with orange juice and taco seasoning. It doesn’t need very long, 5-10 minutes is perfect! The orange just adds a delicious citrus flavour to the fish that puts it on a whole other level. You’re going to love it, trust me. From there it’s as easy as baking it in the oven for about 10-15 minutes until it’s cooked to your liking. Use 2 forks to gently break it into bite-sized pieces. Voila!
The tortillas:
First, choose your tortilla. Now you can opt for either flour or corn tortillas, I chose flour because corn can have a flavour of its own and I didn’t want it to take away from the salmon. You can serve the tortillas as they are, but I like to go one step further for extra yumminess. With just a little bit of olive oil in a pan, fry each side for about a minute until they start to turn golden brown. This step totally isn’t necessary but it adds an extra bit of rustic character I think.

CITRUS SALMON TACOS WITH PINEAPPLE AND CORN SALSA

Ingredients
500g salmon steaks
1 orange
2 tbsps taco seasoning
12 mini flour tortillas
olive oil
1 corn cob
1 tin pineapple chunks
1/2 red onion finely diced
1 iceberg lettuce
1 lime
coriander for garnish
1 block feta for crumbling on top
Directions
- Put all the salmon in a large bowl and add the juice of one orange and the taco seasoning. Let marinate for a few minutes then place the salmon steaks on a baking tray and cook in the oven at 180 degrees for about 10-15 minutes depending on how well done you like your salmon.
- Meanwhile, prepare the salsa by combining the pineapple, corn, red onion and lime juice in a bowl.
- To make the tortillas extra delicious, fry each one in a little bit of olive oil in a pan for a few minutes.
- Take out the salmon and break it up into small pieces – an easy way to do this is with 2 forks.
- To assemble – On the tortilla place some lettuce, the salmon, the salsa and some crumbled feta on top.
