This creamy lemon tortellini is the perfect weeknight dinner that only takes 20 minutes but tastes incredible. You could even whip this one out for date night and serve with a glass of white wine. It’s tortellini tossed with a creamy and zesty sauce, topped with little salty pops of crispy prosciutto. Simple ingredients but such a delicious and flavourful dish. 10 out of 10.
This was my first time trying crispy prosciutto in the oven and okay wow… I’m going to be doing this A LOT more. It’s so simple but adds so much to the dish. Just lay some strips out on a baking sheet and pop in the oven at 180 celsius for 10-15 minutes and you’ve got crunchy perfection.
I am all about quick, mid-week meals. This pasta is great for when you feel like something creamy but not too heavy. The addition of the lemon juice and zest really lightens up the whole dish. For the tortellini, any filling is fine. I went with spinach and ricotta but a three-cheese version would be awesome too. Definitely go for the fresh stuff found in the refrigerated section of the supermarket.
The great part is everything comes together in the time it takes to cook the prosciutto! While it’s cooking in the oven, get a pot of water boiling on the stove. The tortellini only takes two minutes so just have the water ready.
The details…
Soften the onion in some oil and add garlic, cream, lemon thyme and salt and pepper. If you don’t have lemon thyme, regular thyme is totally fine. The great part about this sauce is that it thickens after just a few minutes of simmering. This is a good time to start cooking the tortellini. After two minutes, add the lemon juice and parmesan to the sauce before transferring the tortellini using a slotted spoon. No need to strain as the pasta water makes everything luscious. By the time it’s ready to serve, the prosciutto will be ready to pull out of the oven. Serve with some freshly grated lemon zest.

CREAMY LEMON TORTELLINI WITH CRISPY PROSCIUTTO

Ingredients
4 strips of prosciutto
325g tortellini of your choice
1/2 yellow onion finely diced
2 cloves minced garlic
1 1/2 cups cream
2 tsps fresh lemon thyme
juice and zest of half a lemon
1/2 cup grated parmesan
Directions
- Place the prosciutto on a tray with some baking paper and cook in the oven at 180 degrees celsius for about 10-15 minutes until crispy.
- In a pan on medium heat saute the onion in a splash of oil for about 3 minutes until soft. Add the garlic, cream, lemon thyme and season with salt and pepper. Let simmer for a few minutes until the sauce starts to thicken.
- Cook the tortellini in salted boiling water for 2 minutes.
- Just before the pasta is cooked, add the lemon juice and parmesan. Stir to combine, then add the pasta.
- Top with lemon zest and the crispy prosciutto.
