Bringing you all some comfort food vibes with this Roasted Cauliflower Flatbread. The Indian-inspired roasted cauliflower is just the perfect filling to serve with a creamy homemade yogurt sauce and all the tasty toppings. It’s super simple to throw together, full of fresh ingredients, colourful, flavourful and so delicious. The perfect winter lunch for any day of the week.
So I had surgery this week. It feels weird to say that, the only surgery I’ve ever had is when I got my wisdom teeth out. And normally I wouldn’t talk about this kind of thing on here, but I believe it’s important to raise awareness about these things in any way that you can. For all my girlies reading, let this be a reminder to get your pap smears. I know they suck, but it really is important to catch anything before it turns cancerous. After several abnormal test results, I ended up going to the hospital to have some pre-cancer cells removed from my cervix. It’s definitely not fun, but way better than potentially having to go through cancer treatments. Also, my inbox is always open for anyone going through something similar. <3
Needless to say, it’s been a long week and I was in need of something comforting, yet not too heavy.
Curried cauliflower is something I’ve been wanting to try for a while. And this roasted cauliflower flatbread is the perfect tasty yet easy lunch.
Start by getting your cauliflower in the oven to roast. Cut it up into bite-sized florets and coat generously with Korma curry paste and some passata. You can totally use any curry paste you already have in the fridge – butter chicken, tikka masala, rogan josh even! Once the cauliflower is cooking the rest is easy.
Make the yogurt sauce by mixing together plain Greek yogurt (coconut yogurt would also be good!), cumin powder, coriander powder, dried parsley and a squeeze of fresh lemon juice.
Once the cauliflower is nicely softened and lightly charred, we are ready to assemble! Spread some yogurt onto a flatbread. Naan or roti also work for this, but I used souvlaki breads as they’re my absolute favourite at the moment. Add some cauliflower and top with more yogurt, some pickled red onion, flaked almonds and fresh coriander. These flatbreads are seriously good you guys.

ROASTED CAULIFLOWER FLATBREAD

Ingredients
1 head of cauliflower, cut into small florets
3 tbsp korma paste
3 tbsp passata
1 cup plain yogurt
juice of half a lemon
1 tsp dried cumin, coriander and parsley
naan or flatbread
pickled red onion
1 tbsp flaked almonds
fresh coriander for garnish
Directions
- In a large bowl toss the cauliflower florets with korma paste and passata. Spread evenly on an oven tray and roast for 20-25 minutes at 200°C.
- Meanwhile, make the yogurt sauce by stirring together plain yogurt, cumin powder, coriander powder, dried parsley and lemon juice.
- To assemble, spread some yogurt sauce onto a warm flatbread. Top with the cauliflower, more yogurt, almond flakes, pickled red onion (optional, if you have it) and fresh coriander.
