CHARRED BROCCOLI AND PEARL COUSCOUS SALAD

This Charred Broccoli and Pearl Couscous Salad is a delicious and healthy dish that’s perfect for summertime. The combination of roasted broccoli, pearl couscous, fresh herbs and lemon juice makes for a flavourful and satisfying salad. And of course, the addition of crumbly feta cheese adds a nice tangy creaminess. Perfect as a side dish or a light meal!

The key to this dish is the perfectly charred broccoli. To get that perfect char, cut the broccoli florets into tiny pieces. Then toss them in a bit of oil, lemon juice, garlic powder and a pinch each of salt and pepper. Spread out onto a baking tray and roast in a really hot oven for about 10 minutes. The edges of the broccoli will darken and become crispy, adding a whole new flavour!

To make the couscous a little extra special, we’re going to cook it in some vegetable broth. This is a great way to add a bit of extra flavour!

The dressing is only 3 ingredients but is so so good.

To make the tahini dressing, simply mix together tahini, lemon juice, garlic, and a bit of water if needed. This dressing adds a delicious creaminess to this salad, a nice quick recipe to whip out with any other salad you make too.

To finish the salad, toss the broccoli and couscous together with some pistachios (they add just the right amount of saltiness), fresh dill and mint. Finally, top with some crumbled feta and of course a big drizzle of that yummy dressing.

A filling and flavourful summer side dish.

Ingredients

  • 1 head of broccoli

  • 2 tbsp olive oil

  • juice of 1 lemon

  • 1 tsp garlic powder

  • 1 cup pearl couscous

  • 2 cups vegetable or chicken broth

  • 1/4 cup pistachios

  • small bunch of dill, finely chopped

  • small bunch of mint, finely chopped

  • 1/4 block of feta

  • Tahini dressing
  • 1 cup tahini

  • juice of half a lemon

  • 2 cloves garlic

  • 1 tsp maple syrup

  • water for thinning

Directions

  • If using an oven, preheat to 190°C. Cut the broccoli into small florets and toss them in a bowl with a drizzle of olive oil, lemon juice, garlic powder, salt, and pepper. Spread the broccoli out on a baking sheet in a single layer. Or throw in the air fryer, also at 190°C. Roast the broccoli for 5-10 minutes, or until the edges are crispy and dark brown.
  • Meanwhile, prepare the pearl couscous. Bring a pot of broth to a boil and stir in the couscous, reduce the heat to low, and simmer for about 6-8 minutes, or until the couscous is tender and the liquid has been absorbed.
  • Make the dressing by combining the ingredients in a blender. Add water as needed to thin the sauce if it’s too thick.
  • Add the cooked couscous to a large salad bowl along with the charred broccoli, pistachios, dill and mint and give everything a toss. Crumble over the feta and drizzle over the tahini dressing. Enjoy!
