BAKED FETA WITH GARLIC AND HERB OLIVES

This warm, creamy and luscious Baked Feta with Garlic and Herb Olives is the easiest appetiser you can make. Herby-salty roasted olives served with warm, cheesy feta. It’s the simplest of appetisers, yet so amazingly delicious. Serve this dish at any of your upcoming spring gatherings. It’s perfect with a toasted baguette for scooping.

The olives are key. I used a mix of green stuffed Italian olives and salty Greek kalamata olives. My two favourite varieties. You can use whatever olives you choose! Today we’re roasting them up with olive oil, garlic, salt and pepper. We’re then adding in some fresh thyme and rosemary.

Nestle a block of feta in the middle, throw everything into the oven to bake and basically, you’re done.

I like to serve this with a crusty, toasted baguette for scooping everything up. It’s perfection. Especially while everything is still warm. So delicious, and the simplicity of it all just makes the dish ten times better. 

Now that it’s finally warming up here in Queensland, I’m excited to serve this up all throughout spring. I love that it takes really minimal effort. Just combine everything, bake, and enjoy!! We love a simple recipe like this.

Warm, creamy, and luscious baked feta recipe with olives, garlic, herbs, and a good drizzle of extra virgin olive oil.

Ingredients

  • 1 block Danish feta

  • 1 cup olive oil

  • 1 cup olives, mixed varieties

  • 1 tsp minced garlic

  • 2 sprigs of fresh rosemary

  • small bunch of fresh thyme

  • 1 small baguette, toasted

Directions

  • In an oven-safe dish, place the feta, olives, olive oil, garlic and salt and pepper. Bake in the oven at 200 degrees C for 15-20 minutes, until the feta starts to get some colour.
  • Remove from the oven and serve with crusty bread.
