These super cheesy and crispy air fryer zucchini chips are about to be your new favourite low-carb snack. It’s the first thing I made in my air fryer and probably won’t be the last ‘veggie chip’ I experiment with! Now I know zucchini isn’t everyone’s favourite, but anything tastes better when it’s covered in cheese right? The panko bread crumbs add a delicious crunch to the outside too. I prefer to use panko over regular bread crumbs because they are lighter and have more texture. They are also better for you with less calories, fat, and sodium. The name panko translates to the Portuguese term “pan” meaning “bread”, and the Japanese term “ko” meaning “made from”. There’s a fun fact for you!
Be sure not to overcrowd your air fryer – mine is a 5.3L capacity so I cooked my chips in 2 batches to make sure they don’t stick together. During cooking, it is important to give the basket a shake a few times so they cook evenly on all sides and don’t stick to the bottom. I just use a Kmart air fryer but I’ve heard good things about this Phillips one.
In terms of a dipping sauce, I find the creamier the better for these air fryer zucchini chips. This time around I dipped mine in the Nando’s Perinaise, which is basically peri peri flavoured mayonnaise. A.K.A. the greatest condiment ever created (aside from Cholula). Here are a few other options that are easy to whip up yourself.
Easy Garlic Aioli
- 1/4 cup mayo
- 2 cloves garlic crushed
- juice of half a lemon
- pinch of salt
Cholula Mayo
- 1/4 cup mayo
- juice of half a lime
- 2 tsp Cholula
- a clove of garlic crushed
Sweet Chilli Mayo
- 1/4 cup mayo
- 1/4 cup sweet chilli sauce
- salt to taste
Spicy Creamy Sriracha
- 1/4 cup mayo
- 1 tbsp Sriracha
- juice of half a lemon
- 1 tsp paprika

Ingredients
1 large zucchini
1 cup panko bread crumbs
1 cup grated parmesan
salt, pepper, garlic powder
2 eggs
Directions
- Slice the zucchini into thin slices – it helps if you have a mandolin.
- Crack the eggs into a bowl and whisk until fully combined. On a big plate combine the panko, parmesan, garlic powder and salt & pepper.
- Dip the zucchini slices in the egg until fully coated, the into the panko mixture. Make sure you pat the mixture on tightly.
- Spray your air fryer with some canola spay and place your chips inside.
- Cook at 180 degrees for about 16 minutes, giving it a shake at least twice.
