If you are a noodle lover like me, brace yourself, this saucy peanut noodle bowl is incredible. Easy, delicious, and so good for you too! The combination of the deliciously peanut-y noodles with soft and sweet roast sweet potato, fresh cucumber, and cilantro – so good. This is one of those meals where you can really just throw in whatever ingredients you have on hand, it’s so versatile. It’s also great because the sweet potato, carrot, and kale can all be cooked together on the same tray! The least amount of dishes to clean the better I say.
How to make this delicious peanut noodle bowl…
First things first, prep the sweet potato for roasting. Cut them into approximately 2cm slices (the thicker they are, the longer they will take to cook). Place the slices in a large bowl, drizzle with honey, a splash of olive oil, and season with salt and pepper. Make sure every piece is coated well and lay out flat on a baking sheet. Leave them to roast in the oven, flipping halfway, until the edges go caramelised and delicious. Now sure the recipe says to roast just 2 sweet potatoes, but these things are just so darn good, I like to make extra to snack on.
While the potatoes are roasting away, simply blend up the sauce and cook the noodles per package directions. It’s really that easy! When the potatoes have about 5 minutes left, make some room on the tray for the sliced carrot and kale. The kale will come out lovely and crispy, which was actually a complete accident but made it so much better!
The toppings are essential here. They give this bowl some extra freshness and crunch. If you can’t buy pre-toasted peanuts they are super easy to toast yourself. Just chuck them in a dry fry pan over medium heat, shaking regularly so they toast evenly on all sides and don’t burn.

PEANUT NOODLE BOWL WITH HONEY-ROASTED SWEET POTATOES

Ingredients
noodles of your choice ( i used rice noodles)
2 medium sweet potatoes
2 tbsp honey
2 cups kale
splash of olive oil
1 large carrot sliced
1 large cucumber sliced
2 spring onions sliced
fresh cilantro for garnish
1 lime cut into wedges
handful of toasted peanuts
- Peanut Sauce
1 tbsp honey
3 tbsp peanut butter
2 tbsp soy sauce
1 tsp sesame oil
1 tsp minced garlic
1 tsp minced ginger
1 tsp chilli paste
Directions
- Preheat the oven to 200 degrees. Coat the sweet potato in a splash of olive oil, honey, salt, and pepper and lay flat on a baking sheet. Pop in the oven for about 20-25 minutes. Flip them halfway.
- Blend together the sauce ingredients and prepare the noodles per package directions.
- Remove the stalks from the kale and and massage in a bowl with a splash of olive oil, salt, and pepper.
- When the sweet potato is about 5 minutes from being done, add the carrot and kale to the tray.
- When the kale is crispy and the sweet potato is caramelised around the edges, remove from the oven.
- Toss the noodles in the sauce and place in a bowl with the sweet potato, carrot, kale, cucumber, spring onions, fresh cilantro, toasted peanuts, and a wedge of lime.
