EASY, CHEESY BUFFALO CHICKEN QUESADILLAS

Quesadillas are the perfect quick lunch that everyone should know how to make. As long as you have a tortilla, any filling of your choice, and a sandwich press you will never go hungry! Quesadillas can be filled with literally anything – they can be savory, they can be sweet, whatever you choose! These easy, cheesy, buffalo chicken quesadillas are a personal favourite of mine – and they come together in just 15 minutes! Slightly spicy chicken from the buffalo sauce, oozy, gooey cheese, sandwiched in a crispy tortilla… so yummy.

I’m a big believer in adding Frank’s Red Hot to literally everything I eat. Sometimes I’ll just drink it straight from the bottle… sadly I’m not even kidding. It adds such a delicious buffalo flavour with the perfect level of spice. Go easy though if you prefer things mild, it does pack a bit of a punch! I also like to have some Frank’s on the side for dipping, along with some aioli.

These cheesy buffalo chicken quesadillas are my go-to when all I have in the fridge is random leftovers. I like to use leftover roast/BBQ chicken for some extra flavour instead of just plain chicken breasts. It’s also a big time saver if the chicken is already cooked – all you have to do is shred it.

If you don’t have a sandwich press, get one purely for this recipe. It makes the tortilla super crispy and perfectly melts the cheese. I use this Sunbeam one, I’ve had it for years and it’s been great! You can always make it in a frying pan though, just use a spatula to press it down and make sure you flip it halfway through cooking. A tip – be sure not to overfill them. I know cheese is amazing but don’t add too much or things will get VERY messy.

A delicious spicy buffalo version of chicken quesadillas.

Ingredients

  • 2 tortillas

  • 1 shredded roast chicken breast

  • 3 tbsp cream cheese

  • 2 tbsp Frank’s Red Hot sauce (or more if you like it hot)

  • 1/2 a cob of corn

  • 1 stalk green onion

  • 1 cup cheddar and mozarella blend

  • juice of 1/2 a lime

  • small bunch fresh cilantro

Directions

  • Combine the cream cheese and Franks together in a bowl. Add the chicken and stir through. Add a pinch of salt and pepper.
  • Spread the cheese, chicken, corn, onion, and lime juice over half of each tortilla, making sure they can be folded over.
  • Fold them in half and place in sandwich press.
  • Take out when brown grill marks appear and the cheese is fully melted. Top with cilantro.

Notes

  • If the cheese starts spilling out don’t even worry, this just means you get some extra crispy cheesy goodness!
