SPICY TOMATO AND PEPPERONI PIZZA

My first pizza recipe! I couldn’t believe I hadn’t posted one yet actually, considering how much I’m obsessed with pizza. I’ve decided to start off with a classic. It has all my favourite things, spicy fire-roasted tomato sauce, salty pops of pepperoni, deliciously melty bocconcini cheese, and of course fresh green basil. It’s kind of my two favourite pizza’s combined, Marguerita and pepperoni.

This spicy tomato and pepperoni pizza has become a staple dinner in my home, it definitely has my housemate’s tick of approval! I’m a big believer that homemade anything is always better, especially homemade pizza. Sure they never look perfect, but I like to think it’s just rustic!

The steps:

Firstly the dough. I’ve made my own for this spicy tomato and pepperoni pizza, but there are plenty of pre-made options if you don’t have the time. So when I went to make the dough for this pizza I realised the yeast we had was out of date by almost a year. Not ideal. Hot tip, check your yeast is not expired before you start cooking. This also happened to be my first time making pizza dough, so I’m not going to pretend like I know what I’m doing, but here’s what I did… Combine four cups of flour with two teaspoons of yeast and some salt. Then make a well and pour in a quarter of a cup of olive oil and one and a half cups of warm water. Let it proof in a warm spot for half an hour and it’s ready!

The rest of the pizza is very very simple. The sauce is just some canned fire-roasted tomatoes mixed with chilli flakes, oregano, salt and pepper. For the cheese, I went with convenience, just a 4-cheese-blend from Woolies. Then add a generous layer of pepperoni, some big globs of bocconcini and it’s ready for the oven! Don’t forget to top it with some fresh basil when it’s done.

The perfect homemade pizza the whole family will enjoy.

Ingredients

  • Dough
  • 4 cups plain flour

  • 1 tsp salt

  • 2 tsps instant yeast

  • 1/4 cup olive oil

  • 1 1/2 cups warm water

  • Toppings
  • 1 tsp minced garlic

  • 1/2 can fire roasted tomatoes

  • 1/2 tsp chilli flakes

  • 1 tsp oregano

  • 1 cup cheddar and mozzarella blend

  • pepperoni

  • bocconcini

  • fresh basil

Directions

  • Make the dough. Combine in a bowl the flour, salt and yeast. Make a well and pour in the oil and water. Mix with your hands until a dough forms. Let it sit in an oily bowl for about 30 minutes to let it rise.
  • In a bowl mix the tinned tomatoes, chilli flakes, oregano and season with salt and pepper.
  • When the dough is ready spread it out on a baking sheet and add the toppings. Sauce, cheddar and mozzarella blend, pepperoni and bocconcini.
  • Pop in the oven for 10-15 minutes at 200 degrees celsius.
  • When the cheese is all melted and golden, take it out and top with fresh basil.
