This is the simplest of appetisers, yet so amazingly tasty. Enjoy for brunch, a quick lunch, or as a simple appetiser for your next spring gathering.
Okay, I admit… Winter is not even over yet and I’m already in Spring mode. Call it wishful thinking I suppose! This is one of those recipes that’s so easy, yet so delicious. Perfect for so many occasions. Everything from a quick lunch to an easy appetiser for your next spring gathering. And it’s versatile too!
Grill the sourdough bread with olive oil until it’s toasted and lightly charring on the edges.
For the tomatoes, I simply toss them with olive oil, garlic, salt and pepper and roast for about 10 minutes until they are quite literally ‘bursting’ with flavour.
Whip the ricotta with some lemon zest, salt and pepper in a food processor or blender until creamy. That’s it!
Finally, my favourite accompaniment – spicy honey. It’s the best, especially with creamy whipped ricotta. It adds a sweet and spicy element that pairs well with the cheese. You can by spicy honey at the grocery store but if you want to make it yourself simply warm however much honey you want in a small pan and add chilli flakes. Let them infuse for a few minutes before removing from the heat.
While tomatoes are my go-to for this, all fresh fruits or even fruity jams would be delicious too. Peaches would be amazing too. YUM!

WHIPPED RICOTTA TOAST WITH BURST TOMATOES AND SPICY HONEY

Ingredients
1 loaf of sliced sourdough
1/2 cup olive oil
1 punnet cherry tomatoes
2 tsps of minced garlic
zest of 1 lemon
375g ricotta
1/4 cup spicy honey
fresh basil for garnish
Directions
- Combine the tomatoes, olive oil, garlic and a pinch of salt and pepper to a dish and roast for about 10-15 minutes.
- Whip the ricotta and lemon zest in a food processor until smooth and creamy.
- Spread the ricotta over the bread. Top with tomatoes, honey and fresh basil.
Notes
- The ricotta can be kept in the fridge for up to 3 days.
