THE EASIEST ONE-POT BAKED PIZZA PASTA

This One-pot Baked Pizza Pasta is for nights when you’re craving Italian food but can’t decide between pizza or pasta. Pasta baked with all the classic pizza favourites. The key to this pasta is the creamy mozzarella and salty pepperoni on top. It’s a great easy pasta dish to serve any night of the week. Not just delicious but looks pretty on any table… not to mention everyone LOVES a good pasta bake.

Since I wanted to keep it quick and simple, I decided to make this a one-pot pasta. What this means – everything from making the sauce, to boiling the pasta is all done in just one pot on the stove-top, before being transferred to the oven to finish. If you have an oven-safe pan, you don’t even need to transfer the pasta to a baking dish.

Start off by making the sauce. It’s very important with this recipe to use a large dish, bigger than you’d think you might need. Because we’re making the sauce and cooking the pasta together, you’ll need extra room. We are using lots of garlic and herbs, tomato puree and pepperoni. Since we are cooking the pasta in the sauce, it needs a fair bit of liquid. Don’t worry, most of it will be absorbed/evaporate! Add in the chicken broth (or water) and dry pasta and let simmer for about 5 minutes. No need to fully cook the pasta as it will finish in the oven.

Just top with cheese, lots of pepperoni, and then bake! When you pull it out of the oven it will look like an extra cheesy pizza, but underneath you have saucy pasta. Garnish with fresh basil and you’ve got a winner. YUM.

Top Tips:

  • Choose a pasta shape that is small (penne, rigatoni, macaroni etc) as they are easier to serve.
  • Load up the pepperoni as it tends to shrink when it cooks.
  • Make a big batch and keep it in the fridge for lunches over the next few days.

All the best parts of a pizza combined with pasta and cooked in one pot.

Ingredients

  • 1/2 yellow onion, finely diced

  • 3 cloves garlic, minced

  • 100g pepperoni

  • 1 tsp each of dried oregano, thyme and basil, paprika and chilli flakes

  • 700g passata

  • 500g pasta of choice

  • 2 cups chicken stock

  • 1 cup cheddar

  • 1 cup mozzarella

  • fresh basil for garnish

Directions

  • In a large oven-safe dish (cast iron is good) sauté the onion in a splash of olive oil for a few minutes until the onion turns translucent. Stir through the garlic and pepperoni and simmer for another minute. Add the pasta, passata, chicken stock, herbs, paprika and salt and pepper. Give everything a good stir and leave to simmer gently with the lid on for a couple of minutes.
  • Remove the lid and give it another stir. Continue to simmer for another 5 minutes with the lid off.
  • Top with fresh mozzarella, cheddar and more pepperoni and place under the grill (broiler) for 5 minutes or until the mozzarella is all melty and bubbly and the pepperoni is crispy.
  • Remove from the oven (be careful, the pan will be hot!) and garnish with fresh basil.

Notes

  • This recipe is great for meal-prep. Store in the fridge for up to 4 days.
