15 MINUTE CREAMY RAMEN CARBONARA

Hi everyone, my name is Taylah and I’m a carbonar-a-holic. Seriously I could eat carbonara every single day, and I totally would if it was a bit healthier. It’s luscious, creamy, saucy, with crispy bacon and salty parmesan goodness. This creamy ramen carbonara is going to be your new favourite comfort food. This bowl of deliciousness is the easiest thing ever to make, just a handful of ingredients and it only takes 15 minutes!

Storytime… one night my housemate and I had quite a few alcoholic beverages while we were playing Singstar when we both developed a hankering for some creamy carbonara. So at 12:30 in the morning I cracked out the frying pan and got to work. This recipe is seriously so easy, you can even make it while drunk! Granted I smashed a glass measuring jug in the process… but it tasted amazing!

Okay so it’s not technically ramen, I just use 2 minute ramen noodles and garnish it with the crispy onions that come with them. I had my doubts about whether these noodles would work with a carbonara sauce but dare I say… I think I actually prefer this version over normal spaghetti. These noodles just seem a bit lighter… and they take less than half the time to cook!

It’s very important not to overcook the noodles, which can be easy since they cook so quickly. I put each packet into boiling water and stir them around until they start breaking apart. Then straight away transfer them to the sauce where they will continue cooking.

How this creamy ramen carbonara comes together…

Quick! Pretty much once the bacon is cooked it only takes a couple of minutes. Have one pot of boiling water ready to go, then start frying the bacon. While the bacon is cooking, get the sauce ready. Whisk the eggs, pepper and parmesan in a bowl until well combined. When the bacon looks like it’s almost done (I like mine extra crispy!) add the garlic and pop the noodles in the water and start breaking them up. As I said earlier, as soon as the noodles start to break apart, transfer them to the pan using tongs and pour in the egg mixture. Make sure you are continuously stirring for about a minute with the heat off until the sauce emulsifies, adding noodle water if it looks too dry. Top with the crispy onion packet that comes with the noodles and some fresh green onions and you’re done! See.I told you it was easy.

Luscious and cheesy carbonara, the perfect comfort food.

Ingredients

  • 4 packets of 2 minutes noodles

  • 4 rashers shortcut bacon diced

  • 2 cloves garlic minced

  • 3 eggs

  • 2/3 cup grated parmesan

  • 1 tsp pepper

  • 1 green onion diced

Directions

  • Fry the bacon in a large pan on medium heat until desired crispiness. Meanwhile whisk together the egg, pepper, and parmesan in a bowl until well combined. Get a separate pot of boiling water ready for the noodles.
  • When the bacon is almost cooked, add the garlic and drop the noodles into the boiling water.
  • When the noodles start breaking apart, about after a minute, transfer them to the pan and turn off the heat.
  • Pour in the sauce and don’t stop stirring until it emulsifies. Stir in about half a cup of noodle water.
  • Top with the crispy onions and fresh green onions.
