CHUNKY STEAK AND RED WINE PIES

These Chunky Steak and Red Wine Pies are no joke. This week I’m using my second favourite appliance (nothing beats my air fryer of course) to bring you possibly the most delicious pies you will ever eat. They have a rich, beefy filling with perfectly golden puff pastry… these chunky steak and red wine pies are my new favourite comfort food. Not only that, but they’re so easy to make with a pie maker! Of course, if you don’t have one don’t worry, you could use ramekins or even a muffin tray in the oven.

The weather has been miserable here in Queensland lately, but these pies honestly warmed my soul. Let me tell you… just the smell of them alone filling your kitchen will brighten your mood. They also got a big tick of approval from my housemate and her new boyfriend. This means a lot because he is an extremely fussy eater, so if he likes them they must be good!

Now you may call it cheating, but I always use store-bought frozen pastry. What can I say, I’m a busy gal, and I don’t have time to make it from scratch. If there’s an easier option that tastes just as good, why not right? Most pie recipes say to use filo for the bottom and puff for the top but I’ve always used puff for the whole thing. It really just comes down to personal preference.

Now the secret to the deliciously beefy flavour of these pies, I think, is the Worcestershire sauce. I love adding this stuff to just about anything with beef to really enhance the beefy flavour. The Worcestershire combined with the wine, beef stock, fresh thyme and bay leaves really is a winning tasty combo!

Delicious homemade steak pies that will warm your soul.

Ingredients

  • 4 sheets puff pastry

  • 1 egg

  • 250g beef cut into small chunks

  • 1/2 yellow onion finely diced

  • 2 cloves garlic minced

  • 1 large carrot finely chopped

  • 1 cup mushrooms chopped

  • 1 tbsp plain flour

  • splash of red wine

  • 1 cup beef stock

  • 1 tbsp Worcestershire sauce

  • 1 tsp fresh thyme

  • 2 bay leaves

Directions

  • Fry off the beef in a large pot in a splash of vegetable oil until browned. Add the onion and cook until translucent. About 3-4 minutes. Add the garlic and fry off for about a minute.
  • Throw in all the veggies and cook until slightly softened. Stir through the flour and let it cook off for a minute. Deglaze the pot with red wine.
  • Pour in the beef stock, Worcestershire sauce, thyme and bay leaves and leave on a gentle simmer until most of the liquid is evaporated. Should take about 15-20 minutes.
  • Meanwhile, let the pastry defrost and cut into circles ready for the pie maker.
  • When the filling is ready, remove the bay leaves and assemble the pies in the pie maker. Press down the edges with a fork to seal, brush with egg wash and poke some holes in the top. Cook for about 8 minutes until the pastry is golden.
