5 MINUTE SPICY PEANUT NOODLES

Yes, you read that right. These incredibly saucy and delicious spicy peanut noodles come together in just 5 minutes. All you need is a bunch of pantry staples and a Nutri bullet (or any kind of blender really). I’ll confess, some days I just don’t feel like cooking. Which is very off-brand for me considering how much I love to food blog, but it’s true. I definitely have those lazy days when I wish I could sit on the couch and have someone bring me freshly made meals. On days like this, it can be tempting to opt for Uber Eats when I don’t feel like putting in any effort. Enter these noodles. So quick, but so full of flavour, it’s unbelievable really.

The process:

With just a few pantry ingredients, we are about to make magic. First, get a pot of boiling water on the stove. Or if you have a large microwave-safe container you could even cook the noodles that way. Chuck in the noodles and let them cook for about 3-4 minutes.

The sauce is just as simple. In a blender, add peanut butter, soy sauce, lime juice, ginger, maple syrup and chilli paste. The amount of chilli will depend entirely on how spicy you like it, but remember you can always add more but you can’t take any out. Blend it all together with a splash of water until it’s a smooth consistency. You made need to add a bit more water if it’s too thick.

Lastly, drain the noodles and toss them with the sauce. Serve with some chopped spring onions and peanuts, and some more chilli paste if you like. Done!

This dish is not just quick and tasty but pretty affordable too. The dry ramen noodle packets at the supermarket are like a dollar each, and the rest of the ingredients you probably already have in your pantry. Nothing extravagant, nothing hard to access, just simple food combined to make something special. This is why these noodles would be great for uni students, or anyone who has a jam-packed schedule but still wants to eat good food.

The quickest but most delicious noodles ever.

Ingredients

  • 4 packets of ramen noodles

  • 3 tbsps peanut butter

  • 2 tbsps soy sauce

  • juice of 1 lime

  • 1 tbsp maple syrup

  • 2 tsp chilli paste

  • 1 tsp minced ginger

  • 1 tsp sesame oil

  • 1 stem spring onion

  • handful of peanuts

Directions

  • Prepare noodles per package instructions.
  • Blend the sauce ingredients in a Nutri-bullet or blender and add a splash of water at a time to get it to the desired consistency.
  • Toss with the cooked noodles and top with spring onion and chopped peanuts. Swirl through some more chilli paste if you like it hot.
