Taking our noodles up a notch with this Creamy Sesame Noodle Salad. Fresh, saucy, filling, SO flavourful and delicious served warm or cold. Finish these tasty noodles off with extra spicy chilli oil spooned over top. These quick and healthy(ish) noodles can be made and ready in literally just 10 minutes, using simple ingredients from your pantry!
The super simple details:
We start by cooking your favourite noodles. Any kind of noodle is fine, but a good egg noodle or fresh ramen noodles (no seasoning packet) are probably best. If you’re gluten-free, rice noodles will be great too! Rinse under cold water to cool them down after cooking.
Meanwhile, whisk together the creamy, super savoury dressing featuring tahini. The flavour is balanced with lime juice for brightness, maple syrup for sweetness, sesame oil for richness, garlic for obvious reasons and Sichuan pepper for a spicy kick.
It’s one of those dressings that’s so good you will want to lick it off the spoon!
Finally, thinly slice some cucumber for added freshness. For some protein, you can totally add chicken or tofu but I wanted to keep these noodles fairly simple today. Toss the noodles with the sauce (adding some milk or water as needed), top with the cucumber, a drizzle of chilli oil and some fresh coriander.
Then find some chopsticks… (or a fork)… and eat up!
They’re a little spicy, a touch tangy but with a subtle sweetness and are extra creamy too. All the delicious things!
Turns out the simplest bowl of noodles really can be so delicious. These always end up being my favourites.

Ingredients
1 serving of noodles of your choice
1/4 cucumber, thinly sliced
coriander for garnish
chilli oil for garnish
- Sauce
1/4 cup tahini
1 tsp sesame oil
1 clove of garlic, finely chopped
juice of 1/2 a lime
1 tsp maple syrup
1 tsp Sichuan peppercorns, ground
1 tbsp milk
Directions
- Cook the noodles per package directions and reserve 1/4 cup of the cooking water.
- Combine the sauce ingredients. Add milk to the sauce to thin out as needed.
- Stir the noodles through the sauce and top with cucumber, coriander and chilli oil.
