Then finish off this pasta with a spoonful of whipped feta for a dinner that’s mouth-wateringly tasty.
You guys know I’ve always been in favour of recipes that are on the healthier side. I’m a big fan of making small changes to create a more nutritious meal. Whether it be swapping heavy cream for coconut cream, white bread for wholemeal or sour cream for greek yogurt. This pasta literally comes together in 15 minutes or less.
Start by bringing a pot of water to a boil and add your pasta. While that’s bubbling away, simply blend roasted red peppers (I used the jarred kind this time but you can totally roast them yourself!) along with harissa, garlic, lemon juice and olive oil. Don’t forget to season with some salt and pepper.
Once that’s done, move on to the feta, which is even simpler. Use a food processor to whip the feta with some Greek yogurt until it becomes smooth. May take a minute or so. And you’re ready to go!
When the sauce is ready, toss it with the pasta and then immediately serve on top of a big spoonful of that creamy feta.
Simple. Easy. So good.

HARISSA ROASTED RED PEPPER PASTA WITH WHIPPED FETA

Ingredients
1 packet of Qetoe Low Carb Spaghetti (or pasta of your choice)
4 roasted red peppers
1 tsp harissa seasoning
1 tsp dried oregano
3 cloves garlic, minced
juice of half a lemon
1/4 cup olive oil
1 block Danish feta
1/2 cup Greek yogurt
Directions
- Blend feta, greek yogurt and a pinch of salt and pepper to make the creamy whipped feta. It may take a minute or so to get the right consistency. Add a scoop of the feta to a plate.
- To a food processor or a blender (I use my nutri-bullet) add the roasted peppers, garlic, lemon juice, olive oil and seasonings. Blend to form a smooth sauce, adding water as needed if it’s too thick.
- In a large pot of boiling, salted water cook pasta until al dente.
- Strain the pasta and add it back to the pot and stir through the sauce. Pile the pasta on top of the feta and enjoy with some fresh basil.
