HEALTHY GREEN PEA PASTA

Simple and delicious Healthy Green Pea Pasta. We are taking the humble pea and making it the star of the show with this easy weeknight dish. This pasta is everything you want from a pasta. It’s quick, light, and uses mostly staple ingredients. Yet it still feels hearty, extra fresh and crave-worthy.

This fresh pea pasta… It. Is. GOOD! I mean, it’s so delicious and also very different. Why? Because I made the pasta sauce out of peas. No cream, no eggs, just lots of peas, parmesan cheese, and fresh herbs.

Vibrant green peas are blended with garlic, fresh herbs and lemon to create a vibrant7 sauce that is stirred through cooked pasta with crispy bacon and loads of Parmesan cheese. Best of all, it takes just minutes to make and uses the simplest of ingredients, most of which you probably have in your pantry right now! If you’re looking for a new, healthier pasta dinner, this is it.

As I said, this is a pretty simple and very quick pasta to make. It’s not a one-pot and done recipe, but all in all, it’s pretty straightforward.

For starters, you’ll need to boil some pasta, reserving the pasta cooking water to use for thinning out the pea sauce. This is key. I’ve said this before, but the pasta cooking water is an essential ingredient to creating a great pasta sauce. Always reserve a little water before draining. You can really use any cut of pasta you love, but I’m loving shortcut pasta like shells for this. Each bite of pasta comes with a little puddle of sauce.

While the pasta is cooking, start the sauce and the bacon. Since we are using a second pan anyway for the bacon, I like to gently sauté the garlic for a bit before adding it to the blender. It just takes out some of the bitterness that fresh garlic has. Add this to the blender along with freshly steamed peas (I use frozen so I need to steam them but if you have access to fresh peas then go for it!), lemon juice, fresh basil and fresh mint. Season with a pinch of salt and pepper and blend until smooth. Crisp up some finely diced bacon and stir that through the pasta along with the sauce and a big helping of freshly grated Parmesan. Now is the time to add a splash of pasta water if it’s looking too thick.

Lastly, drizzle over some chilli oil, add some more fresh basil and parmesan and you’re done!

Ingredients

  • 1/4 cup olive oil

  • 3 cloves garlic, sliced

  • 4 rashers shortcut bacon, finely diced

  • 1 1/2 cups frozen peas

  • 1/4 cup fresh basil

  • 1/4 cup fresh mint

  • juice of half a lemon

  • 500g pasta

  • 1/2 cup parmesan, grated

  • chilli oil for garnish

Directions

  • Optional step: In a medium-sized pan, gently fry the garlic in olive oil until lightly caramelised. About 1-2 minutes. Remove from the pan and allow it to cool.
  • Add diced bacon to the same pan and fry until crispy.
  • Meanwhile, add the peas to a pot of boiling water. Remove when they are all floating. Boil the pasta for about 8 minutes.
  • Add 1 cup of peas to a blender along with the garlic and oil, the fresh herbs, lemon juice, salt and pepper and a splash of water. Blend until smooth.
  • Drain the pasta, reserving 1 cup of water. Add the sauce to the pasta along with the rest of the peas, the bacon and parmesan on a low heat and stir until the cheese melts into the sauce. If the sauce is too thick stir through some of the reserved pasta water. Drizzle chilli oil on top.
