CHEESY SPINACH AND BACON FILLED PASTRIES

Golden, flaky pastry, filled with cheese, spinach and crispy bacon… you are going to love these! They’re perfect appetisers, or even served as a light dinner with a side salad. These spinach and bacon filled pastries are also pretty simple, using just a handful of pantry staples like puff pastry and frozen spinach.

Can you believe it’s already September? I swear it feels like we are still in May. I guess all the lockdowns make it feel like no time has passed. Speaking of lockdowns, I made these pastries during one. Here in Brisbane Australia, we’ve actually been pretty lucky. We have the occasional week-long lockdown but for the most part, life is business as usual in this part of the country. But if you’re unfortunately stuck in home isolation somewhere, don’t worry these cheesy pastries are fun to both make and eat!

The process:

Start by frying off some diced bacon in a pan until it’s nice and crispy. If you’re vegetarian you can totally leave out the bacon, they will still taste amazing! To make the filling it’s super simple, just mix the ricotta, spinach (defrosted), grated cheddar, garlic powder, oregano, salt and pepper together in a large bowl. When the bacon is ready stir it through and then you’re ready to assemble!

Cut each pastry sheet into 4 squares and place a spoonful of filling in the centre of half of them. I ended up using my hands, it was easier than a spoon as the mixture is quite sticky. Lay the rest of the pastry squares on top, gently pressing down so there are no air bubbles. Fold the edges over to create a seal and press down with a fork. Then cut a few slits in the top, brush with egg wash, sprinkly over some everything bagel seasoning and they are ready to be baked. Pop them on a couple of baking paper lined trays and cook in a 180-degree oven for about 20 minutes until the pastry turns golden.

Everything Bagel Seasoning: So I’m yet to find it in Australian stores but it’s easy to make yourself. You just need sesame seeds, poppyseeds, garlic granules, onion granules and flaky sea salt. Find the recipe I use here.

These cheesy-filled pastries are the perfect family appetisers.

Ingredients

  • 5 sheets puff pastry

  • 4 rashers bacon diced

  • 500g frozen spinach

  • 1 cup cheddar grated

  • 250g ricotta

  • 1 tsp dried oregano

  • 1 tsp garlic powder

  • 1 egg beaten

  • everything bagel seasoning

Directions

  • Fry off the bacon until crispy. In a large bowl combine the bacon with the cheeses, spinach, oregano, garlic powder and a pinch of salt and pepper.
  • Cut each sheet of pastry into 4 pieces, and scoop a heaped tablespoon of the filling into the centre of 10 squares.
  • Lay the remaining 10 squares on top, pressing down the edges with a fork. Brush the tops with egg wash and gently cut some slits in the top.
  • Place them all over 2 baking trays and sprinkle with bagel seasoning. Bake for 20 minutes until golden brown.

Notes

  • If you have leftovers, they can be stored in the fridge for up to 3 days. I recommend re-heating them in the air fryer to get them nice and crispy again.
