Crispy prosciutto and brie in a bagel. That’s right, we have a breakfast recipe today! This year I’m hoping to start posting more breakfast recipes, it is the most important meal of the day after all. And these prosciutto and brie bagels are a must-try.
Crispy prosciutto, creamy brie cheese, fresh rocket and tomato chutney, sandwiched between two halves of a toasted bagel. Serve with some freshly squeezed orange juice and you’ve got the perfect breakfast to be enjoyed any day of the week.
The details:
Let’s go through the filling. We start with deliciously sweet tomato chutney. Then some rocket for a layer of freshness. (Baby spinach or lettuce would work here too). Next we have the prosciutto crisped to perfection in a pan. You don’t even need any oil, just fry a couple of rashers for about a minute on each side. Don’t discard the grease! Use it to toast the inside of the bagels.
Now my favourite part, the brie. So so creamy and oozy. Place two rectangles of sliced brie on each bagel. Now when the bagels are heated up in the sandwich press, the cheese will soften and begin to ooze out. Delish.

CRISPY PROSCIUTTO AND BRIE BAGELS

Ingredients
2 bagels sliced in half
2 rashers of prosciutto
1/2 wheel of brie cut into strips
rocket
2 tbsps tomato chutney
Directions
- In a pan on medium-high heat fry the prosciutto for a couple minutes each side until crispy. No need to add oil. In that same pan, once the prosciutto is done, take it out and add the bagels face down to toast for about a minute.
- Time to assemble. Spread a tablespoon of tomato chutney on one half of each bagel. Then add some rocket, a slice of prosciutto and two slices of brie per bagel.
- Toast in a sandwich press for about a minute to melt the brie.
