CHEESY QUICHE TACO BOWLS IN THE AIR FRYER

Okay this has to be the greatest air fryer idea I’ve ever seen. I’m not taking credit for this one, my mum told me about it and I just had to put it on the blog. So it’s a quiche… but in a taco bowl! Genius right?! Probably better for you because it’s not made with pastry but with a tortilla. These quiches are also pretty versatile, you can add anything you have in your fridge. Chopped up broccoli or capsicum would also be great.

These are great lunchbox ideas for kids because they are fun to eat and easy to clean up since the bowl is edible! They also keep really well in the fridge. I sometimes take one out for breakfast and eat it cold because I’m lazy – still tastes good though! They keep for up to a week. If your air fryer doesn’t have shelves I recommend getting the attachment because otherwise you will need to make these in batches.

So how do you make them…

Fry off the bacon first so it’s nice and crispy before adding it to the mixture. While it’s cooking, prep everything else. Finely dice the onion – red or yellow it doesn’t really matter – just whatever you have on hand. Let that caramelise in the pan with the bacon along with some garlic. Beat the eggs in a large mixing bowl and add salt, pepper, cheese, the onion and bacon mixture, milk, and flour.

From here it’s super easy, just pour the mixture into the taco bowls (be sure not to fill right to the top to avoid spillage). Top with more cheese, a slice of tomato and some salt and pepper. Then pop them in the air fryer and you’re good to go!

To check that they’re done it’s like you would a cake. Insert a knife into the centre and if it comes out clean they are ready.

Keep in mind every air fryer is different. When I first made these cheesy quiche taco bowls I cooked them at 180 degrees, but this made the edges burn while the inside was undercooked. I found 160 degrees to be just right.

A fun and simple air fryer recipe the kids will love!

Ingredients

  • 4 pieces shortcut bacon diced

  • 1/2 onion (red or yellow, doesn’t matter)

  • 2 cloves garlic minced

  • 10 eggs

  • 1/2 cup milk

  • 1 tbsp flour

  • 2 cups cheddar cheese

  • 2 tomatoes

Directions

  • Fry off the bacon in a pan. Through in the onion and garlic to caramelise.
  • Whisk the eggs, milk, and flour. Stir through 1 cup of cheese, bacon and onion mixture, and salt and pepper.
  • Pour into the taco boats and top with more cheese, tomato, and salt and pepper.
  • Pop in the air fryer for 20 minutes at 160 degrees.
