EXTRA FLAKY SPRING ONION PANCAKES WITH CREAMY FETA SAUCE

Don’t skip arm day, you’re going to need your strength for this one. Okay, I promise it’s not hard, just a lot of dough rolling. I first saw these spring onion pancakes on TikTok and I knew I had to try them. Super buttery and flaky pastry, filled with sweet spring onions, and the feta sauce makes the perfect salty accompaniment. I believe these are traditionally Chinese, made with sesame oil and served with a soy dipping sauce, but I wanted to put a little twist on them. I make these ones with delicious melted butter and serve them up with a zesty and creamy feta cheese dip. Believe me when I say, once you try these you will be making them every weekend.

The process:

The dough: It’s a little time-consuming but so worth it. Combine flour and salt in a bowl and mix with hot water until crumbly. It will seem too dry but once you start kneading it will come together. Knead for 10 minutes until it bounces back when you press it with your finger. Then let it rest for 45 minutes. Seems like a while but you can make the sauce while you wait – multi-tasking! This next part is where it gets fun. Divide the dough into four equal portions and roll into circles, the thinner the better. Then roll them up into a cigar shape and coil them around to form a circle. Then roll out flat again, this time brushing with butter and LOTS of spring onions. You want to make sure all the dough is covered. Then repeat the process before. The spring onions can add quite a bit of moisture to the dough which can make it tear, so if this happens just dust more flour over it. Then fry in some oil (or more butter if you’re feeling extra special).

The feta sauce: The simplest and tastiest sauce. Simply blend feta, greek yogurt and lemon juice until smooth. Add water if it’s too thick. Stir through some chopped parsley and you’re done!

P.S. This sauce is so versatile, it also tastes great spooned over some pesto pasta or served as a dip for some crackers.

Savoury pancakes with a salty feta sauce, a delicious appetiser!

Ingredients

  • 2 cups plain flour

  • 1 tsp salt

  • 170ml boiled water (slightly cooled)

  • 1/4 cup melted butter

  • 1 bunch spring onions chopped small (scallions)

  • Feta Sauce
  • 1/2 block Danish feta

  • 1 tbsp greek yogurt

  • juice of 1 lemon

  • handful fresh chopped parsley

Directions

  • In a large mixing bowl combine the flour and salt and make a well in the centre. Pour in the hot water and mix with a spoon until roughly combined.
  • Knead the dough for 10 minutes until it’s smooth and bounces back when you press it. If it’s too sticky dust it with some extra flour. Cover and let sit for 45 minutes.
  • The feta sauce: blend together in a blender or food processor the feta, yogurt and lemon juice until smooth and creamy. Stir through the parsley and a pinch of salt and pepper.
  • Divide the dough into four equal portions. Roll the first portion into a thin circle (as thin as you can get it) with a rolling pin. Then roll the circle up into a cigar shape and twist it around on itself. Roll out until it’s a flat circle again. Brush with butter and sprinkle a generous amount of spring onions and a pinch of salt. Then repeat the process of rolling up, coiling and rolling out flat again. Do this with each portion.
  • Heat some neutral oil in a pan on medium heat and fry each pancake until it’s golden brown and crispy on both sides. Only takes a few minutes.
  • Cut into triangles and serve with the feta sauce.
