ASPARAGUS AND BACON PUFF PASTRIES WITH CREAMY BRIE

I could seriously eat these asparagus and bacon puff pastries every day. For something so simple, they really are insanely delicious. Flaky puff pastry – creamy, oozy brie – crispy maple bacon – and of course the tasty asparagus. My favourite thing to do is take what would be a pretty basic recipe and make it extra special. That’s why I’ve used brie cheese instead of plain old cheddar. Also, it’s not just bacon, it’s maple bacon… I mean come on… how awesome is maple bacon? The perfect pop of sweet and saltiness.

How to make these asparagus and bacon puff pastries

If you’re a whiz in the kitchen you can totally make the puff pastry… I however do not have the time or skills to make it from scratch. My thought is if the frozen stuff tastes good, why not use it! Now this recipe requires a lot of asparagus. I like to put 3 stalks in each pastry, and there are 8 pastries, so that’s 24 asparaguses… asparagie? Asparagusees? Oh well you get the point. I figure since we are using brie and maple bacon, we should probably add something of nutritional value.

Now the bacon. No… the maple bacon… YUM. I read a few recipes before I made this as I’ve never had it before. In the end I decided to mix together 2 tablespoons of maple syrup with 2 teaspoons of brown sugar and brush each bacon strip with it on both sides. Then I fried them in the frying pan – I know some people do it in the oven but I find the frying pan easier.

Once the bacon is mapled and the pastry is thawed, we are ready to assemble! Each sheet makes 4 squares. Lay down a slice of brie, the bacon and 3 asparagus stalks. Cut the asparagus so it overlaps the edge of the pastry just a little bit. Then fold over the corners, brush with an egg was and chuck in the oven until golden brown. Easy as that!

Ingredients

  • 2 sheets frozen puff pastry

  • 24 asparagus stalks

  • 1 wheel of brie

  • 8 strips of bacon

  • 2 tbsps maple syrup

  • 2 tsps brown sugar

  • 1 egg

Directions

  • Pre-heat the oven to 180 degrees.
  • Make the maple bacon. Mix together the maple syrup and brown sugar and brush both sides of each bacon strip. Cook in frying pan flipping to brown it on both sides.
  • Thaw the puff pastry.
  • Cut the brie into 8 slices and cut the asparagus so it will fit on the pastry.
  • To assemble, cut each pastry sheet into 4 squares. Place the brie, then bacon, then asparagus and fold over each corner. Brush over with the egg wash.
  • Place in the oven at 180 degrees for about 15 – 20 minutes. Take out when golden brown.
