Summer is fast approaching and you know what that means… stone fruits are back in season! Nectarines, apricots and of course my favourite – peaches. Enter this quick and delicious honey whipped feta with grilled peaches and prosciutto. It’s salty, it’s sweet and it’s full of amazing flavour. Serve up this creamy feta dip with some crusty bread and you’ve got yourself a winning appetizer.
Don’t forget a glass of pink Moscato on the side of course!

Start by getting your peaches on the grill. Or in my case in the griddle pan. Brush them with delicious brown sugar and cinnamon glaze and cook until each side has grill marks.
While the peaches are cooking away, whip up the creamy feta. Simply chuck the feta, cream cheese, lemon juice, honey and olive oil in a processor and blend until smooth. This honey whipped feta is great because you can make it a couple of days in advance and store it in the fridge.
Then it’s as easy as putting everything together in a bowl. The creamy honey feta, the sweet grilled peaches, topped with salty prosciutto and fresh thyme… all that’s left is some crunchy bread and you’re all set! Such a simple recipe but don’t let it fool you, it’s sure to impress.

HONEY WHIPPED FETA WITH GRILLED PEACHES AND PROSCIUTTO

Ingredients
1 block danish feta
1 tbsp cream cheese
juice of half a lemon
1 tbsp honey
1 tbsp olive oil
2 peaches
2 tbsps melted butter
1 tsp brown sugar
1 tsp cinnamon
3 rashers prosciutto
a few stems of fresh thyme for garnish
crusty bread for dipping
Directions
- Cut the peaches in half and into slices. In a small bowl whisk together the butter, brown sugar and cinnamon. Brush some of this mixture onto a griddle pan on medium heat. Lay the peach slices down and brush the other side with butter.
- In a food processor blend together the feta, cream cheese, honey, lemon juice and olive oil. If it’s too thick add a splash of water. Blend for a couple of minutes until smooth.
- Flip the peaches after a few minutes or until there are grill marks underneath. After the slices are cooked on both sides brush with more butter and remove from the heat.
- In a bowl, pour in the creamy feta, place on top the peaches, prosciutto and fresh thyme. Serve with crusty bread.
