It may still be winter here in Queensland but I was craving some summer flavours when I made these. Nothing beats tender steak sandwiches loaded with cheese, caramelised onion, fresh rocket and pineapple. Don’t forget the super simple, creamy pesto mayo, it really makes this sandwich.
The steak is pretty simple. Seasoned well with salt and pepper and pan-fried on both sides. For me, when it comes to cooking steak I believe less is more.
My second favourite part of these sandwiches is the pesto mayo. It’s perfectly creamy and adds a hint of yummy herbiness. My favourite mayo to use is Kewpie, it’s so rich and flavourful, the best mayo ever in my opinion. Mix that with any jar of pesto and you’ve got the best creamy sauce.
Weekend lunch should probably be these loaded steak sandwiches. It’s ready in just about thirty minutes, pretty healthy, uses simple, everyday ingredients.. and is of course seriously delicious.

LOADED STEAK SANDWICHES WITH CREAMY PESTO MAYO

Ingredients
2 Turkish bread rolls
1 tbsp butter
1 brown onion, thinly sliced
1 tbsp balsamic vinegar
2 beef steaks
4 cheddar cheese slices
fresh rocket
4 slices pineapple (canned or fresh)
2 tbsp mayo
1 tbsp pesto
Directions
- Add a splash of oil and butter to a pan on medium heat. When the butter has melted, add in the onion. After about 5 minutes pour in the balsamic vinegar. Keep stirring the onions so they cook evenly. Remove from the pan after about 8-10 minutes.
- Turn up the heat and to the same pan add in the steak that has been seasoned with salt and pepper on both sides. It should gently sizzle. Cook for about 2 minutes per side, depending on the thickness and how done you like your steak.
- Optional: Toast the bread rolls in the pan for about a minute cut side down.
- When the steak is done, let rest while making the pesto mayo. In a small bowl stir together the mayo and pesto.
- Spread the pesto onto the bread, then add the cheese, caramelised onion, steak that has been sliced, fresh rocket and pineapple.
