SMOKEY MAPLE GRILLED CHICKEN BURGER

The ultimate grilled summer sandwich.

Simple ingredients, loaded with flavour, and slightly healthier. This Smokey Maple Grilled Chicken Burger is perfect for when you have friends over for a BBQ. The chicken marinade is a simple but delicious combo of real maple syrup, sriracha, smoked paprika and garlic. Sandwich the juicy, sweet and a little spicy chicken between two soft buns with crispy bacon, lettuce and a creamy pesto sauce.

It’s honestly too good.

This chicken burger has a few layers. First the chicken is marinated with the smokey maple glaze. It’s a little sweet and spicy with lots of paprika for that extra smokeyness. As I usually say when it comes to marinating – the longer the better, but if you only have 10 minutes that’s fine too!

Then grill up the chicken. BBQ or grill pan is fine. Be sure to save some of the dressing for drizzling over the cooked chicken.

While the chicken is grilling it’s a good time to make the pesto sauce. Simply combine greek yogurt, mayo and basil pesto. Sun-dried tomato pesto would also taste amazing! It’s the perfect creamy, herby accompaniment to the sweet maple chicken.

Don’t forget to throw some bacon into the pan with the chicken and fry until nice and crispy.

When the chicken has grilled and the sauce is made, it’s assembly time.

Spread a little mayo on the burger buns and toast in the same pan the chicken was in. I love this trick, it adds.a delicious crispy element to the burgers! To finish things off, spread some pesto yogurt onto the toasted buns, add the bacon, lettuce and of course the chicken.

Surprisingly, I did not add any cheese to these burgers, but if you wanted to I think a slice of cheddar would be pretty amazing with everything happening in this burger.

Ingredients

  • 1/2 cup maple syrup

  • 1 tsp sriracha

  • 2 tsp smoked paprika

  • 2 cloves minced garlic

  • 2 chicken breasts, sliced in half lengthways

  • 4 pieces of shortcut bacon

  • 4 burger buns

  • lettuce

  • 1/2 cup greek yogurt

  • 1/4 cup basil pesto

  • 1 tbsp mayo (plus a little extra for the buns)

Directions

  • Stir together the maple syrup, sriracha, smoked paprika, garlic and a pinch of salt and pepper in a bowl. Add the chicken to a large ziplock bag and pour half the maple mixture over the chicken. Let marinate in the fridge for at least 30 minutes.
  • Preheat an outdoor grill or grill pan to medium heat and oil the grates. 
  • Add the chicken and grill for a few minutes per side flipping a few times, basting with the reserved maple mixture until the chicken is cooked through. After each side is nicely browned, turn the heat down a bit so the sugary maple syrup doesn’t burn.
  • Meanwhile in the same pan add the bacon and fry until crispy.
  • Remove the chicken from the heat and drizzle any remaining maple mixture over the chicken. Brush a small amount of olive mayo onto the inside of each bun and toast on the same grill for about a minute.
  • Mix the yogurt and pesto together in a small bowl. To assemble, spread the sauce onto the bottom of each toasted bun. Top with lettuce, bacon and chicken.
