CRISPY HONEY BUFFALO CHICKEN PITA WITH WHIPPED FETA

This loaded Crispy Honey Buffalo Chicken Pita offers a fun weekend lunch or dinner that feels extra special. Homemade crispy chicken made with cornflakes and served in some pita with all the extras. Creamy whipped feta and a fresh and simple tomato and cucumber salsa. Add spicy, hot honey and buffalo sauce for a wonderful, colourful dish that really is SO GOOD.

Let’s start with the star of the show: the crispy chicken.

Set up a breading station with shallow bowls of flour, egg and cornflakes. Make it extra tasty by adding buffalo sauce to the egg! Dip each tender in the flour first, then egg mixture, and finally coat generously with crushed cornflakes. I used Crunchy Nut for the extra honey flavour! So yummy.

Now if you don’t have an air fryer that’s totally fine you can just bake these. Either way, spray with a little bit of oil and bake/air fry for 15 minutes. I needed to do mine in 2 batches so I didn’t crowd the air fryer.

While the chicken is cooking we make all the other condiments.

The whipped feta is super easy. Simply blend feta with a splash of milk, lemon juice, garlic, oregano, salt and pepper. So simple and adds a delicious creaminess!

Chop tomato, cucumber, red onion and mint to create a cooling, refreshing salsa to go on top of the pitas.

Finally, whisk some buffalo sauce with honey and lemon juice to make a spicy sauce to drizzle over the crispy chicken. And that’s it! So many yummy flavours and textures… way better than any restaurant.

Ingredients

  • 4 chicken thighs or 2 breasts, cut into tenders

  • 1 cup plain flour

  • 2 tsp paprika

  • 2 eggs

  • 1/2 cup buffalo sauce

  • 2 cups crunchy nut cornflakes, crushed

  • 1/2 cucumber, finely diced

  • 1/4 red onion, finely diced

  • 1 tomato, finely diced

  • 1/4 cup fresh mint, finely chopped

  • 2 tsp honey

  • 1 tbsp lemon juice

  • Whipped feta
  • 1 block of Danish feta

  • 1/4 cup milk

  • juice of half a lemon

  • 1/2 tsp dried oregano

  • 1 clove of garlic

Directions

  • Set up 3 shallow bowls. 1 with flour, paprika, salt and pepper. The second with eggs beaten with a tablespoon of buffalo sauce. The third with the cornflakes. Coat each tender in flour first, then egg, then cornflakes. Place half the tenders in the air fryer and spray with a little bit of cooking spray. Air fry for 15 minutes at 180°C (350°F). When they are done, cook the second half.
  • While the chicken cooks, combine the cucumber, red onion, tomato and mint in a small bowl.
  • Blend the ingredients to make the whipped feta.
  • Whisk together the rest of the buffalo sauce, honey and lemon juice.
  • To assemble, spread a tablespoon of whipped feta on some pita. Place a chicken tender on top and drizzle with the buffalo sauce. Spoon on some of the tomato, cucumber salsa and enjoy!
