This one-pan Creamy Chicken Gnocchi is the perfect cozy dinner. Think chicken alfredo but with the addition of pillowy potato gnocchi, Italian herbs and loads of cheese. This simple, hearty dish is so delicious! Truly one of those all-in-one dinners that everyone will love. Great for during the week, but also fancy enough to serve at a gathering with friends or family. You really can’t go wrong!
So if you haven’t already noticed, I am in comfort food mode… and this gnocchi bake is definitely comforting. It’s the perfect dinner to simmer on the stove and fill your house with delicious smells, then bake and eat.
It basically hasn’t stopped raining for the last two weeks here in Brisbane, so of course, I have been eating food that is warming and cozy. So much soup and slow-cooked meals. I am actually in heaven. There’s no better feeling than when you’re sitting on the balcony watching a storm roll in with a steaming hot bowl of food in front of you.
Enter this creamy chicken gnocchi.
It all comes together really quickly. As you can guess, you only need one pan and really just a handful of ingredients. Most of which you may already have in the pantry. Also, one-pan dinners are just the best. If ever there’s a recipe that can be simplified to all in one pot, I will absolutely do it.
Simply put, all you need to do is chuck everything in a pot to simmer. Let the chicken and onion cook for a bit to slightly caramelise before adding in the garlic, white wine, herbs, chicken broth and gnocchi. When the liquid has reduced and the gnocchi has softened, add the baby spinach, sun-dried tomatoes and cream. The spinach and tomatoes are totally optional but highly recommended for extra flavour.
So simple, yet the most amazing dish.
Finally once everything has made friends in the pan, remove from the heat and stir through loads of grated Parmesan. Serve straight out of the pan. YUM.

ONE-PAN CREAMY CHICKEN GNOCCHI

1 tbsp olive oil
1 chicken breast, diced
1/2 onion finely diced
3 cloves garlic minced
1 tsp dried oregano
1 tsp dried basil
1/2 cup white wine
500g uncooked potato gnocchi
1 cup chicken broth
1/2 cup cream, milk or coconut milk
1 big handful of baby spinach
1/4 sun-dried tomato strips
1/2 cup Parmesan cheese
Directions
- Heat olive oil in a large oven-safe pan over medium-high heat. Add the chicken and sear on all sides for about 3 minutes and add the onion, cooking until fragrant. Add the garlic, oregano and basil, and simmer for about a minute.
- Deglaze with white wine and stir in the gnocchi and chicken broth. Season with salt and pepper. Bring to a boil and let simmer for about 5-6 minutes. Stir through the cream, baby spinach and sun-dried tomatoes and simmer for another minute.
- Remove from the heat and stir through the Parmesan. Top with fresh basil and serve.
