ONE POT CREAMY TUSCAN CHICKEN PASTA

This One Pot Creamy Tuscan Chicken Pasta is THE best any night of the week pasta. Each delicious bowl is filled with chicken, sun-dried tomatoes, herbs, lemon juice for a hint of zest and of course loads of pasta – tossed through a creamy Tuscan-inspired sauce. It’s the easiest, creamiest bowl of pasta that’s fancy enough for the weekend, but simple enough to make during the week. And most importantly, it’s all made together in one pot!

I am no stranger to posting delicious pasta recipes. If you’re ever looking for a delicious pasta dish to make either for yourself, your family, or your partner… rest assured this blog has got the good stuff. There really is infinite ways to enjoy it, and I am determined to try every single one!

The process…

What’s amazing about this pasta is it comes together so quickly and easily. First you’ll need to cook up the chicken and the onions. One the chicken is nicely browned and the onions are translucent add the garlic and deglaze with white wine. I’ve suggested half a cup but you can honestly use however much your heart desires. Then you’ll add the tomato pasta, dried herbs, chicken stock and of course the pasta. For one pot pastas I find short cut shaped pasta is easier as it fits better in the pan and doesn’t become clumped together. Penne, rigatoni or fusilli work great!

And now we simmer. This recipe is all about the sauce. It’s buttery, a touch garlicky, slightly spicy, and so so creamy. My favourite combo.

You want the pasta to be only just al dente before adding the spinach, sun-dried tomatoes and lemon.

Okay confession time. So I am a notoriously impatient person… and lately when I’ve make a creamy pasta I’ve been adding the milk/cream/cheese way too soon and it ends up curdling. So hopefully you can learn from my mistakes and let your pasta cool for a couple minutes before adding the cream cheese and parmesan!

Serve this delicious pasta with fresh basil and an extra sprinkling of parmesan. Delish! You can even cook up a big batch and use it for meal prep. It lasts up to four days in the fridge and heats up really well in the microwave.

Ingredients

  • 500g short cut pasta

  • 4 chicken thighs cut into cubes

  • 1 brown onion finely diced

  • 3 cloves garlic minced

  • 1/2 cup white wine

  • 2 tbsps tomato paste

  • 2 cups chicken broth

  • 1 tsp chilli flakes

  • 1 tsp dried oregano

  • 1 tsp dried thyme

  • 1 tsp dried parsley

  • 1/4 cup chopped sun-dried tomatoes

  • 2 large handfuls baby spinach

  • juice of half a lemon

  • 2 tbsps cream cheese

  • 1/3 cup grated parmesan

  • fresh basil

Directions

  • In a pan on medium-high heat start browning the chicken in a dash of vegetable oil. After a minute add the onion and let simmer until it becomes translucent. Add the garlic and fry off for another minute.
  • Deglaze the pan with white wine and let it simmer for another minute before adding the tomato paste. Give everything a good stir and toss in the uncooked pasta. Pour in the stock and season with the herbs as well as salt and pepper. Bring to a boil then reduce to a simmer and put the lid on.
  • After about 5 minutes of simmering with the lid on (and stirring occasionally), remove the lid and stir through the sun-dried tomatoes, spinach and lemon juice. Continue to simmer for another 2-3 minutes or until the pasta becomes al dente.
  • Turn off the heat and let cool for a couple minutes before stirring through the cream cheese and parmesan. Garnish with fresh basil.
