ROASTED LEMON PEPPER CHICKEN SOUVLAKI PITA POCKETS

Street food-inspired Roasted Lemon Pepper Chicken Souvlaki. Seasoned chicken stuffed inside fresh pitas with all the best Greek-style extras. Delicious and fresh tzatziki, hummus, and all of the toppings we love. This loaded pita is SO GOOD and makes for a fun, delicious, and different midweek lunch or dinner.

I love how this recipe is a “build your own” style. Simply pick and choose what you want your pita stuffed with. I’ve included: hummus, lettuce, tomatoes, feta, olives, tzatziki and the best part – sweet potato fries. For something different, you could also try pickled red onions, artichokes, baby cucumbers or sun-dried tomatoes.

The details:

First, the chicken gets tossed with olive oil, lemon pepper seasoning, oregano and garlic. Then let the chicken sit for a bit to really soak up the wonderful flavours. The longer the better, but if you’ve only got 15 minutes to marinate that’s totally fine too! Then simply thread onto some skewers and pop in the oven for about 20 minutes, flipping halfway.

While the chicken is cooking, I usually start prepping the toppings and making up a batch of sweet potato fries to serve alongside. Sure you could make these yourself but I like to save a bit of time by buying the frozen packs of chips and cooking them in the oven with the chicken or even in the air fryer. We are already putting enough effort into the rest of the dinner, I figure we are allowed to take a few shortcuts every now and then!

As for the toppings/sauces, I used a bit of classic hummus and some homemade tzatziki. Hummus is a must, and the tzatziki adds a nice coolness against the peppery chicken.

Then just stuff the chicken inside a warmed pita pocket and add every last topping. SO DELICIOUS.

Also, the leftovers – they’re really tasty the next day when piled onto a salad or served up with leftover fries and hummus. It’s a great idea to double the recipe and have some prepped for the week ahead. I took the leftovers to work the next day and was the envy of everyone in the office!

Homemade, seasoned chicken stuffed inside fresh pitas with all the best Greek-style extras.

Ingredients

  • 2 chicken breasts, cut into 1-inch cubes

  • 1/4 cup olive oil

  • 1 tbsp lemon pepper seasoning

  • 3 cloves garlic, minced

  • 2 cups lettuce, shredded

  • 1/2 punnet cherry tomatoes, sliced

  • 1/4 cup kalamata olives

  • 300g frozen sweet potato chips

  • 1/4 cup feta, crumbled

  • 1/2 cup hummus

  • 4 pack of pita pockets

  • Homemade Tzatziki
  • 2 tbsp greek yogurt

  • juice of half a lemon

  • 1 tsp dill

  • 1/2 cucumber, grated

  • 1 clove of garlic, minced

Directions

  • In a bowl, combine the chicken, olive oil, garlic, lemon pepper seasoning and a large pinch each of salt and pepper. Let marinate for 15 minutes or overnight in the fridge.
  • Thread the chicken onto skewers and place on a baking sheet in a 200°C oven for about 20 minutes, flipping halfway. Discard the marinade. Place the frozen chips on another baking sheet and place them in the oven under the chicken to cook per package directions. Alternatively chuck them in the air fryer at 200°C for 15-20 minutes, giving them a few shakes while cooking.
  • Meanwhile, combine the tzatziki ingredients in a bowl and prep the rest of the toppings.
  • To assemble, stuff/spread each pita with hummus, then lettuce and tomatoes. Add the chicken, olives and feta. Drizzle over the tzatziki and enjoy.

Notes

  • Be sure to discard any leftover marinade, as it contains traces of raw chicken.
