There really is no better feeling than opening the lid to a slow cooker that’s been cooking all day, filling your house with amazing smells. This slow cooker Korean pulled beef is perfectly spicy and sweet, it falls apart so easily that you could eat it with a spoon! It can also be enjoyed in many different ways. I’m sharing with you 2 variations – in a taco or served with fluffy basmati rice.
The one downside of slow cookers is that the sauce isn’t able to reduce, leaving it pretty runny. That’s why I suggest simmering it on the sauté function of the slow cooker for about 20 minutes after it’s finished slow cooking. Adding cornflour will also help to thicken it – this time around I added about a tablespoon. It’s also a good idea to add the veggies during the simmer time. If you slow cook them they will just go mushy.
As a taco:
A totally new take on the Mexican tacos we all know and love. These slow cooked Korean pulled beef tacos are so saucy, spicy and sweet… perfect for entertaining. Top them with some shredded red cabbage, carrot, and fresh coriander. The cabbage and carrot add a delicious crunch which works great with the saucy beef. Now I love coriander a lot… like a LOT…. so I tend to add quite a bit to my tacos – I just think it adds a nice freshness.
Served with rice:
A more traditional way to enjoy this slow cooker Korean pulled beef – served with some lovely fluffy basmati rice. This version is great for meal prep, in fact I’m taking it to work for my lunches this week! I like to top it with some fresh coriander and sliced spring onions.

SLOW COOKER KOREAN PULLED BEEF

Ingredients
1 kg beef
1 yellow onion
1 large red capsicum chopped
2 pak choy chopped
2 stalks spring onion
fresh coriander
sesame seeds
- Sauce
1 pear
1/4 cup soy sauce
2 tbsp brown sugar
1 tsp chilli paste
1 tbsp sesame oil
3 cloves garlic
1 tsp minced ginger
Directions
- Blend all the sauce ingredients together and pour into the slow cooker along with the beef cut into chunks. Set it for 6-8 hours depending on what cut of beef you use.
- Once the beef is falling apart, set the slow cooker to sauté and reduce the sauce for about 20 minutes. Add cornflour as needed to thicken.
- After 10 minutes add the onion, capsicum, and pak choy.
- When the sauce has thickened stir through the spring onions, top with coriander and sesame seeds and enjoy.
