Switching up the classic chicken and rice with these Weeknight Saucy Peanut Chicken Skewers. Made on the stove in under an hour, using pantry ingredients like chicken, Thai curry paste, peanut butter, and creamy coconut milk. It’s very saucy, creamy, a little spicy, healthy and so so delicious. Finish each bowl off with steamed rice, fresh herbs and more crushed peanuts for some crunch. You’ll have the perfect healthy peanut chicken to enjoy for dinner and lunch the next day!
The details…
We start by mixing together the creamy peanut sauce. For this, all you need is peanut butter, Thai red curry paste, soy sauce, fish sauce, lime juice and a splash of coconut milk. Coat the diced chicken (thighs are best in my opinion!) in half of the sauce and thread onto skewers. It should make about 8 or 9 skewers.
Let them marinate for a little bit while preparing the rice. Fry the skewers in a little bit of oil and let them brown on one side before turning, continuing until cooked through.
The final step is the sauce. A.K.A. the best part.
Add the remaining sauce we made earlier to a small pot and pour in some more coconut milk. Gently heat and continually stir until it becomes smooth and creamy. And that’s it!
Finish with steamed rice and a generous spoonful of that delicious, creamy sauce. Add a sprinkle of crushed peanuts, fresh herbs and chilli oil. Alternatively, you could serve the saucy chicken on its own or with rice noodles would also be delicious.
And just like that, dinner is done. It’s tasty, it’s easy and it’s fairly healthy too. You could serve this with some steamed broccoli or bok choy for added greens.

fresh coriander and chilli oil to serve

- In a small pot, add the remaining sauce and the rest of the coconut milk. Stir on low heat until smooth and creamy.
- Serve the chicken over steamed rice with a generous spoonful of sauce. Top with crushed peanuts, fresh coriander and chilli oil.
