THAI-STYLE LEMONGRASS CHICKEN WONTONS

Homemade and flavourful Thai-style Lemongrass Chicken Wontons. These are for nights when you’re craving spicy, warming, wontons, but don’t feel like takeaway. Easy homemade chicken or pork wontons tossed in a delicious sweet and spicy sauce. Serve each saucy wonton with fresh spring onions and coriander for a fun and healthy dinner.

This filling is seriously good. It’s a mix of ground chicken (or pork), lemongrass, spring onions, garlic, coriander, lime juice, soy sauce, fish sauce, sesame oil and brown sugar.

For some added veg you could include some chopped cabbage or grated carrot.

Assembling is easier than you’d think. Simply scoop some filling into the centre and wet the edges of the wonton. Fold the wrappers in half, then pinch to seal along the sides. Fold the two outer corners into the centre. Don’t stress about making these look perfect… each little wonton is unique! The process is a little time-consuming but is a great excuse to get the whole family in the kitchen to help!

There are a few different ways you can cook the wontons, my favourite is to steam them but I’ve included instructions for boiling and pan frying as well. Boiling is definitely the quickest!

Prepare the dipping sauce by whisking together soy sauce, rice vinegar, lime juice, maple syrup and chilli flakes until well combined.

To serve, place the wontons on a plate and drizzle with the sauce. Garnish with some fresh coriander and the green parts of the spring onions. I like to add some chopped chillis as well for extra heat. So cozy and yum!

Ingredients

  • Wontons
  • 500g chicken mince

  • 2 stalks of lemongrass, white part only, minced

  • 3 cloves garlic, minced

  • 1 tablespoon chopped coriander

  • 1 spring onion finely chopped

  • juice of 1 lime

  • 1 tablespoon fish sauce

  • 1 tablespoon soy sauce

  • 1 teaspoon brown sugar

  • 1 teaspoon sesame oil

  • 300g wonton wrappers

  • Dipping sauce
  • 3 tablespoons soy sauce

  • 2 tablespoons rice vinegar

  • 1 tablespoon lime juice

  • 1 tablespoon maple syrup

  • 1 teaspoon chilli flakes

  • chopped coriander, spring onions and red chillis for garnish

Directions

  • In a mixing bowl, combine the ground chicken, minced lemongrass, minced garlic, coriander, fish sauce, lime juice, soy sauce, brown sugar, sesame oil, and black pepper. Mix well until all the ingredients are evenly incorporated.
  • To assemble the wontons, place a teaspoonful of the chicken filling in the centre of a wonton wrapper. Dip your finger in water and dampen the edges of the wrapper. Fold the wrapper over the filling to form a triangle, pressing the edges firmly to seal. Make sure there are no air pockets or openings. Then fold the 2 outer corners into the centre. Repeat the process until all the filling and wrappers are used.
  • To cook the wontons, you have a few options:
    Steaming: Arrange the wontons in a steamer basket lined with parchment paper to prevent sticking. Steam for about 8-10 minutes or until the chicken is cooked through.
    Boiling: Bring a pot of water to a gentle boil. Drop the wontons into the boiling water and cook for about 5-6 minutes or until they float to the surface and are cooked through.
    Pan-frying: Heat a little oil in a non-stick skillet over medium heat. Place the wontons in the skillet and cook for about 2-3 minutes on each side until golden brown and cooked through.

    *Always cut one open to check they are fully cooked before removing from the heat.
  • While the wontons are cooking, prepare the dipping sauce. In a small bowl, whisk together soy sauce, rice vinegar, lime juice, maple syrup and chilli flakes until well combined.
  • Once the wontons are cooked, transfer them to a plate and garnish with chopped coriander, spring onions and sliced red chilli (optional). Drizzle with some of the dipping sauce and enjoy.

Notes

  • Make the wontons in bulk when you have extra time. Freeze what’s left over for the quickest, easiest lunch or dinner! To reheat the frozen wontons just boil them as directed above.
