This Mediterranean-style Roasted Red Pepper and Burrata Flatbread is the perfect yummy flatbread for any day of the week. Delicious flatbread topped with garlic, herbs, salty olives, roasted red peppers and creamy burrata. The key is to bake it on a sheet pan at a high temp until the crust becomes extra crispy. Every last bite of this delicious flatbread will leave you wanting more. It’s savoury, crunchy, and the creamy burrata makes everything better.
Behold my new obsession…flatbread…or pizza or whatever you want to call it. Truth is, I really do not know the difference between the two! I mean, maybe there’s some technical difference that I’m unaware of, but I feel like flatbread and thin crust pizza seem pretty much the same. The only reason I’m calling this recipe flatbread, is simply because it feels a little lighter than your typical pizza… so I’m going with it.
So what do we need to make this flatbread…
- crust: any kind of flatbread from the store will do, I used an Afghan flatbread I found at the markets.
- olive oil: keeping it simple because less is more.
- fresh garlic: the more the better, I am a garlic lover.
- dried basil and oregano: a must for ample flavour.
- black olives: probably my favourite part, got to love salty olives.
- tons of thinly sliced roasted red bell peppers: luckily you can buy these in jars all ready to go!
- burrata: this oozy cheese adds so much creaminess.
- loads of fresh basil: I just love the smell!
Serve this delicious flatbread up as an appetizer or just on it’s own as an afternoon snack. Either way, everyone will be wanting more!

ROASTED RED PEPPER AND BURRATA FLATBREAD

Ingredients
1 flatbread
1/4 cup olive oil
3 cloves garlic, minced
1 tsp each dried basil, oregano and red pepper flakes
1/4 cup black olives
1/2 cup sliced roasted red peppers
1 ball of burrata
fresh basil for garnish
Directions
- Preheat the oven to 200 degrees C. Grease a baking sheet with olive oil.
- Spread the flatbread with olive oil. Add the garlic, basil, oregano, crushed red pepper flakes, and a pinch each of salt and pepper. Add the olives and red peppers.
- Transfer to the oven and bake for 10 minutes or until the crust is crisp. Remove from the oven and top with fresh basil and burrata. EAT!
