BLUEBERRY, BANANA AND COCONUT LOAF CAKE

Sweeten up your breakfast or morning tea with this blueberry, banana and coconut loaf cake. Super sweet, super soft, and super easy to make! Chances are, you’ve already got all of these ingredients. Sweet banana and coconut cake swirled with loads of blueberries. This is the perfect berry-filled pound cake for any and all occasions. Bonus? It’s simpler to make than you’d think, and so very pretty… with very little effort.

I’ve never shared any kind of pound cake or loaf cake for that matter, so I decided this blueberry, banana and coconut loaf was the perfect fit. Fresh flavours in a simple loaf-style cake.

Bursting with flavour and juicy berries… best enjoyed with a little homemade whipped cream plus a warm cup of tea or coffee. Perfect Sunday morning brunch, afternoon snack, or late night dessert. You really can’t go wrong!

So how do you make it…

It’s quick and so simple.

Sift some flour into a bowl and add brown sugar, desiccated coconut and salt. In another bowl whisk together the eggs, vanilla, bananas and coconut yogurt. Combine with the dry ingredient.

Now, the yogurt is KEY. It gives a delicious flavour and makes the loaf so so moist. This is my first time baking with coconut yogurt, but it will not be my last. It’s a game-changer and I’m totally obsessed.

Once all the wet ingredients have been combined with the dry ingredients, simply stir in lots of blueberries and you’re ready to bake!

Like most pound cakes, this takes almost an hour in the oven…which is a long while. But I promise you it’s worth the wait!

Once the cake has cooled, sift over some icing sugar, slice, and enjoy!

Every bite is bursting with sweet blueberries, hinted with banana and coconut, and perfectly sweet too.

Of course, I highly recommend you serve each slice with a cup of tea. It’s the only way to really enjoy a slice of berry-filled cake for breakfast or dessert.

You can really use whatever berry you love or have an abundance of in the fridge or freezer. Blackberries, raspberries, or a combo of your favourites… all will work, and all will be delicious.

A deliciously sweet loaf cake filled with tasty fruit.

Ingredients

  • 1 1/2 cups self-raising flour

  • 1 cup brown sugar

  • 1 tsp salt

  • 1 cup desiccated coconut

  • 2 eggs

  • 1 cup coconut yogurt

  • 1 tsp vanilla extract

  • 2 medium bananas, mashed

  • 1 1/4 cups frozen blueberries

Directions

  • In a large bowl combine the flour (sifted), brown sugar, desiccated coconut and salt. In a second bowl whisk together the eggs, coconut yogurt, vanilla and bananas. Add the wet ingredients to the dry ingredients and stir until combined.
  • Fold in the blueberries and pour into a loaf pan lined with baking paper.
  • Bake in a 160-degree C oven for an hour, checking it at the 50-minute mark.

Notes

  • Store in plastic for 4-5 days.
