GINGER AND CHICKEN DUMPLINGS WITH SWEET SOY CHILLI DIPPING SAUCE

Dumplings have got to be one of my favourite foods… and these ginger and chicken dumplings are no exception. There’s something so satisfying about being able to make your own dumplings at home… and they’re actually pretty easy! Soft and pillowy, filled with a delicious ginger and chicken mixture and steamed to perfection. Then dipped in a salty and sweet spicy soy dipping sauce, these dumplings are possibly the perfect comfort food.

I was inspired to make these after going out for dumplings with my best friend one night. They had so many delicious flavours but I wanted to see if I could make my own. So I went to the shops and bought wonton wrappers and a steamer basket and got straight to work. To my surprise they came together quite easily.

How to assemble:

Begin by making the filling by combining chicken mince, ginger, soy sauce, spring onions and salt and pepper in a large bowl. I find it best to use my hands to mix everything together.

Now it’s time for the folding. There are countless ways to fold a dumpling. I will admit I had to watch a few Youtube videos before I found a technique that worked for me. The wonton wrappers you will want to use are the fresh ones found in the refrigerated section of your supermarket. I could only find square ones so I had to cut mine into circles. Place a teaspoon of the ginger and chicken filling into the centre and use your finger to wet the edge of the circle with water. Be careful not to overfill your dumplings otherwise they will be really difficult to fold.

Time to fold:

The method I like to do is make little pleats all around the edge until you can’t make any more, and then twist the top so they don’t open up. Use more water if the wrappers aren’t sticking very well.

Make sure you’ve got a pot of boiling water on the stove. Then place some of the dumplings in the steamer basket with a sheet of baking paper underneath so they don’t stick. Leave the basket on top of the pot of boiling water for 10 minutes. You will need to cook them in batches so they don’t all stick together.

While your little pockets of perfection are steaming away, it’s time to make the sauce. This sauce is the bomb.com. It’s salty, sweet, a little tangy and spicy. All the good things. The perfect accompaniment for our ginger and chicken dumplings.

In a small bowl stir together soy sauce, rice wine vinegar, finely diced fresh garlic, maple syrup, sesame oil, sugar and chilli flakes. Thin it out with a splash of water. The level of spice is totally personal preference. I used about half a teaspoon of chilli flakes in mine.

Ingredients

  • 1 packet wonton wrappers

  • 400g chicken mince

  • 2 tsps minced ginger

  • 2 cloves garlic minced

  • 2 spring onions finely diced

  • 1 tbsp soy sauce

  • Dipping sauce
  • 2 tbsps soy sauce

  • 1/2 tsp sesame oil

  • 2 tbsps maple syrup

  • 2 tsps rice vinegar

  • 1 tsp chilli flakes

  • 1 tsp sugar

  • 2 cloves garlic roughly chopped

Directions

  • Fill a pot with water and get it boiling on the stove.
  • In a large bowl combine the chicken, ginger, garlic, spring onions and soy sauce.
  • If you need to, cut the wonton wrappers so they are round. Place a teaspoon of the filling in the centre of each and dab a little water around the edges with your finger. Form each dumpling into balls.
  • Place a piece of baking paper in the bottom of a steamer basket and add the dumplings. Make sure they are not touching (you will have to steam them in batches).
  • Place the basket on top of the pot of boiling water and steam for 10 minutes.
  • While the dumplings are steaming away, stir together all of the sauce ingredients along with a splash of water in a small bowl.
