These super fresh Greek Meatball Rice Bowls are an easy weeknight dinner that always tastes delicious and feels special. Pan-fried herbed meatballs served with fluffy white rice, cooling cucumber salsa and lots of garlic yogurt sauce. Serve these easy-to-throw-together bowls with fresh pitas and you’ll have a Greek-inspired dinner that’s SO TASTY! And the best part? These bowls are great for meal prep too! I’ve been taking them to work for my lunches and making the whole office jealous.
I have literally been making these Greek meatball rice bowls at least once a week.
I’ve kept things so so simple by using store-bought beef and lamb meatballs from the supermarket. They come un-seasoned so it’s kind of like a blank canvas for adding flavour!
To save time, get the meatballs and rice cooking at the same time.
Season the meatballs with loads of herbs and fry in a pan making sure they get nicely browned on all sides.
While everything is cooking make the salsa and yogurt sauce. Simply dice tomato, cucumber and red onion and combine with fresh dill and mint (or whatever herbs you love, but these ones give that Greek-style flavour). Add freshly squeezed lemon juice and salt and pepper to bring together this deliciously cooling and fresh salsa.
The final part is the yogurt sauce which is just Greek yogurt combined with minced garlic. I kept this part simple because there’s already so much flavour in everything else!
Such a fun and bright lunch or dinner for any day of the week. And what I love is that the leftovers are perfect for enjoying several days after!

GREEK MEATBALL RICE BOWLS

Ingredients
20 beef and lamb meatballs
1 tsp garlic powder, dried dill, dried mint and dried parsley
1 cup basmati rice (uncooked)
1 tomato, diced
1/2 cucumber, diced
1/4 red onion, finely diced
1 tbsp fresh dill
2 tbsp fresh mint
juice of half a lemon
1 cup Greek yogurt
2 tsp minced garlic
Directions
- Add the meatballs and some neutral cooking oil to a pan on medium-high heat. Season with garlic powder, dried dill, mint and parsley, salt and pepper. Keep flipping as they cook so that they brown on all sides, about 15 minutes.
- Meanwhile, cook the rice. My preferred method is on the stove in double the amount of water.
- Make a fresh salsa by combining the tomato, cucumber, onion, fresh herbs and lemon juice.
- Combine the yogurt and garlic in a small bowl. Season with salt and pepper.
- To assemble, add the cooked rice to a bowl along with the cooked meatballs. Top with salsa and yogurt dressing.
