HEARTY WINTER CHICKEN AND VEGETABLE PASTA SOUP

This super simple Hearty Winter Chicken and Vegetable Pasta Soup is the perfect comforting dinner…great for nights when you’re craving Italian, but want something warming and healthy too. A mix of vegetables, simmered with Italian seasonings, a splash of wine, chicken, and loads of pasta. Finish each bowl off with an extra sprinkle of parmesan and serve with crusty bread. It’s hearty, full of veggies, and so delicious. Perfect for any night of the week. Plus the leftovers make for the best lunch the next day!

Winter is fast approaching which means it’s comfort food season. And what better addition to a warm and cozy evening than a big bowl of this creamy and delicious soup. But it’s not your average chicken soup. This one is creamy, cheesy, and packed with vegetables and pasta as well.

It’s all my favourite things in a bowl of soup, made on the healthier side too. I promise you this one is good… and kid-friendly too!

The details…

This whole soup comes together on the stovetop – how good. It’s important to saute the vegetables first, I really think it really adds so much depth to the flavour. Once they are lightly caramelised, add in the herbs, dijon and deglaze with a nice big splash of white wine. Finally, add the chicken broth and cook low and slow. If you’re vegetarian, feel free to leave out the chicken. It will be great either way!

The longer you can cook this soup the better. If you’ve got 2 hours? Cook for 2 hours. If you’ve only got 30 minutes? Cook for 30 minutes. Either way, I can guarantee you it will be delicious.

I prefer to cook the pasta separately, just so that it doesn’t soak up too much of the broth during cooking.

Once the soup has finished cooking, before serving, stir in a large handful of spinach, cooked chicken that’s been shredded, cream or milk, parmesan cheese, and the cooked pasta. Simmer for another few minutes and then that’s it.

So simple and so delicious.

Serve this cozy soup up with some fresh basil and crusty bread and you’ve got yourself a winner.

If you’re planning to enjoy the leftovers over the following few days, be sure to first remove the pasta before refrigerating. That way it won’t soak up all the broth. Simply throw back in before serving.

The ultimate comforting and creamy soup for a chilly winter day.

Ingredients

  • 200g short-cut pasta

  • 1 onion

  • 2 large carrots roughly chopped

  • 4 celery stalks roughly chopped

  • 4 cloves garlic minced

  • 1 tsp dried rosemary

  • 1 tsp dried oregano

  • 1 tsp dijon mustard

  • 1/2 cup white wine

  • 6 cups chicken stock

  • 1 chicken breast shredded

  • 1 big handful of baby spinach

  • 1 cup cream

  • 1 cup grated parmesan

  • fresh basil

Directions

  • In a large pot on medium heat saute the onion, carrot, and celery in some olive oil for a few minutes until they soften. Add the garlic, dried herbs and dijon and cook for a further minute. Season with salt and pepper. Deglaze the pan with wine then add the chicken stock and bring to a boil. Reduce the heat and leave the soup to gently simmer for at least half an hour.
  • Meanwhile, shred the chicken and cook the pasta until al dente.
  • Add the chicken, spinach, cream, parmesan and pasta to the soup and stir to combine. Simmer for another couple of minutes and then serve topped with fresh basil and some crusty bread.
