Pastry appetisers are my favourite recipes to post and these Crispy Spinach and Feta Filo Bites are no exception. Flaky filo pastry rolled up with feta cheese and spinach then baked until warm, golden, and crisp. Serve these yummy, air fried bites with spicy honey for dipping. Such a simple and delicious appetiser that everyone loves!
I don’t often cook with filo pastry, I’m normally a hardcore puff fan. But I was keen to try something different and you can’t go wrong with spinach and feta right? They turned out so yummy, I’m definitely going to start using filo more.
We have to talk about the spicy honey. I know I’m a little late to this trend but I wish I discovered it sooner because it’s so dang good. And easy! The sweetness of the honey hits you first, but then the heat from the chillis comes through and adds a whole other layer of deliciousness. I recommend making a big batch and storing it in a cute little mason jar to use on other things.
So how do we make these spinach and feta filo bites…
The process is pretty simple and actually quite fun. The trick with filo pastry is layering. For this recipe I use four sheets, with a small amount of olive oil in between each. My oil sprayer definitely came in handy for this. They are only a few dollars and can be found at any major grocery store. Because filo is so thin, it tears easily, so just be gentle while assembling.
In a bowl mash up the spinach and feta and season with salt and pepper. One sheet (well four sheets layered together) will make 12 bites. Conveniently, one block of feta is the perfect amount. Fold each one up into little parcels and spray again with olive oil the the sesame seeds will stick.
Cook in the air fryer at 180C for about 15 minutes or until golden. Alternatively, bake in the oven at 180C for 20 minutes. While they’re cooking is the perfect time to make the spicy honey. Simply heat honey in a small pan and toss in some roughly chopped chillis. It only takes a few minutes to infuse the heat into the honey.
The spiciness and sweetness really balance with the salty, cheesiness of the bites.
If you want to prepare the rolls ahead of time and bake off before guests arrive, that works too! Just keep them covered until you’re ready to bake so the pastry doesn’t dry out.
These will be so perfect for Mother’s Day or anytime you need a quick, simple, and tasty appetiser.

CRISPY SPINACH AND FETA FILO BITES WITH SPICY HONEY

Ingredients
4 sheets filo pastry
1/2 cup cooked spinach (frozen works too, just defrost)
1 block feta
olive oil
1/4 cup sesame seeds
fresh dill
1 cup honey
1/2 fresh red chilli
1/2 fresh jalapeno
Directions
- In a large bowl mash up the feta with a fork and add the wilted spinach. Season with salt and pepper.
- Lay flat a sheet of pastry and spray with olive oil. Repeat until all four sheets are stacked on top of each other.
- Scoop 12 heaped teaspoons of the filling onto the pastry spacing them evenly apart.
- Cut out each square and fold the edges over to form little cubes of feta filled pastry. Spray the tops with more olive oil and dip into sesame seeds. Cook in the air fryer at 180C for 10-15 minutes.
- Spicy Honey: Gently heat the honey in a small saucepan over low-medium heat. Add the chillis roughy chopped and stir. After a couple of minutes remove from the heat and take out the chillis.
- Sprinkle with fresh dill, drizzle with honey and enjoy.
