MINI STRAWBERRY PUFF PASTRY STRUDELS

Embracing the inner child in all of us today with these cute Mini Strawberry Puff Pastry Strudels. These fun treats are made with store-bought pastry (because who can be bothered making their own!), dollops of strawberry jam, and sweet frosting with sprinkles. These mini treats are bursting with fruitiness, perfectly sweet, and ever so flaky… every bite is delicious and fun!

The reason behind this recipe is actually pretty simple. It was a cold and dreary day and I wanted to make something really fun, and really easy.

Sometimes you just need to keep things as simple and straightforward as possible. You really can’t go wrong with store-bought puff pastry… and there are so many yummy strawberry jams, so I knew that using pre-made was the perfect shortcut for this recipe!

The process is quick. Cut the sheet of puff pastry into evenly sized squares and place a dollop of jam in the centre of each. Roll them up and pinch the sides. Make sure they’re sealed really well so that the jam doesn’t ooze out.

While the strudels are baking in the oven it’s time to make some simple frosting! Beat an egg white until it starts to turn into a silky texture. It will start going frothy first, that’s how you know you’re on the right track! Slowly add icing sugar until you have your frosting! This is such a simple and easy icing that can be used on many different things like cookies, cakes or pastries.

When the strudels have come out of the oven and cooled, drizzle over the frosting and some fun sprinkles if you have them!

Buttery, sweet, berry-filled and honestly, they will put anyone in a happy mood.

MINI STRAWBERRY PUFF PASTRY STRUDELS

A quick and easy sweet treat.

Ingredients

  • 1 sheet frozen puff pastry

  • 1/2 cup strawberry jam

  • 1 egg

  • 1/4 cup sugar

  • Royal icing
  • 1 egg white

  • 1/2 cup icing sugar

Directions

  • Defrost 1 sheet of puff pastry and cut into 12 squares.
  • Place one teaspoon of strawberry jam into the centre of each square. Gently roll them up and tightly pinch each end to seal in the jam. Use a fork to press the edges together even more.
  • Place on a lined baking tray and poke a hole in the top of each strudel. Brush with egg wash and press the egg side into sugar.
  • Bake in the oven for 8-10 minutes at 180 degrees C until the pastry puffs up and turns golden.
  • The icing
  • In a bowl beat an egg white for several minutes until it turns white. Gently add in the icing sugar bit by bit and beat until it turns thick and glossy.
  • Drizzle the icing over the strudels and top with sprinkles if you choose.

Notes

  • Store in an airtight container for up to a week.
