SIMPLE NO-BAKE BISCOFF CHEESECAKES

Biscoff is definitely the flavour of the month it seems! These No-Bake Biscoff Cheesecakes are an easy, no-bake, so delicious dessert, perfect for entertaining. The filling is made with 5 base ingredients…cream cheese, heavy cream, sugar, vanilla extract, and of course biscoff spread. The crust is a mix of sweet biscuits and salted butter. When the crust is combined with the creamy cheesecake filling you get luscious, no-bake cheesecakes that are sweet, creamy, and so so moreish. Finish them off with some crumbled biscoff biscuits and a drizzle of caramel sauce.

So I’ve opted to serve these no-bake biscoff cheesecakes in ramekins because they are a good serving size and you can easily scoop it straight out. If you don’t have ramekins you could totally use a muffin pan instead. Even small drinking glasses could be cool to show the layers.

For the crust I went with the standard option of digestive biscuits and melted butter. It’s just two simple ingredients but seriously tastes so darn good. The thought of using actual biscoff biscuits for the base did cross my mind… but with the cheesecake filling being so sweet already I thought it would be a bit much. Press the crust into the ramekins as tightly as you can and let it set in the fridge while making the filling.

While the crust hardens up in the fridge, get to work on the filling. It’s honestly the simplest thing in the world, but also so delicious. Just whip together cream cheese, sugar, vanilla, heavy cream and biscoff spread and you’re done. You have a no-bake cheesecake filling that’s so creamy and luscious! Scoop the filling into the ramekins and leave to set in the fridge for at least 5 hours.

So that’s it. No oven. Nothing too fancy. Simple prep time. Easy.

Super simple and delicious cheesecakes!

Ingredients

  • 2/3 of a packet of digestive biscuits

  • 1/2 cup butter, melted

  • 500g (2 blocks) cream cheese

  • 2 heaped tbsps Biscoff spread

  • 1/4 cup icing sugar

  • 1/4 cup cream

  • 1 tsp vanilla extract

Directions

  • The base: Blend biscuits in a food processor to form crumbs. Mix with the melted butter until well combined and press an even amount into the bottom of each ramekin. Place in the fridge while making the filling.
  • The filling: Beat together the rest of the ingredients until they are smooth and well incorporated. Spoon large dollops of the filling into each ramekin and use a teaspoon to make the top nice and smooth. Leave to set in the fridge for at least 5 hours.

  2. I made this and it was so easy, shame I didn’t have the right size tin, but I still made it work. Struggled to get it out like but I got there in the end too lol.

    Any idea on how many calories 1slice contains
